I’m with you on the sunshine, and even though I really appreciate rain, I’m always happy to see the sun return. Fortunately, here in the desert, we generally don’t get rain in the winter, so there’s usually sunshine available when we need it most. I like frittatas for lunch or dinner, so I’m saving this recipe for when I want to make one.

I have cooked this 1-2 times per week since I learnt this recipe. Very tasty and well worth the time and effort. I didn’t have a sieve handy when I first made this dish and I can say first hand how crucial that step is. I had no idea how big of a difference that was going to make until I experienced both outcomes.
King oyster mushrooms are a good substitute if you cant get fresh shitake. I also I like to throw some bok choi in at the last minute to add some green to the meal.

Breakfast for dinner is always fun with the kids and we do pizza a lot too. They are getting to be the age that I can allow them to use the cook top, it makes cooking/baking fun! I cooked your pancakes with my son just this morning! He spilled the almond milk all over the counter and dropped about 4 eggs, but it still worked and he was having fun with me rather than just plopped in front of the tv while I was alone in the kitchen!
