INGREDIENTS
Rolls: This roast beef sliders recipe uses 1 package of Hawaiian rolls, brushed with melted butter and sprinkled with oregano.
Fillings: These sliders are full of layers of horseradish cheese, sliced roast beef, and onions grilled in brown sugar and butter.
HOW TO MAKE ROAST BEEF SLIDERS
STEP ONE: Start by preheating the oven to 350 degrees F. In a large skillet over medium heat, melt 1 tablespoon of butter. Add in the thinly sliced yellow onion, brown sugar, and salt. Stir the ingredients and cook the onions for 5-10 minutes or until they are soft. Remove the grilled onions to a small bowl and set them aside.
STEP TWO: Half the sheet of Hawaiian rolls and place the bottoms of the rolls into a baking dish. Next, place a layer of 6 slices of horseradish cheddar over the roll bottoms. Now place one bunched-up slice of roast beef on each roll. Top each roast beef slice with a spoonful of onions. Finish by laying the last 6 slices of cheese on the top and placing the roll tops back onto the prepared sliders.
STEP THREE: To finish off the sliders, melt the remaining butter and brush it over the top of the rolls. Sprinkle the sliders with dried oregano and place them in the oven. Bake the sliders for 10-15 minutes or until the cheese is melty and the rolls are golden brown.
TIPS FOR SUCCESS
- Don’t pull the individual rolls apart. Simply cut the whole tray of rolls in half so you have one bottom layer and one top layer of rolls.
- If you can’t find horseradish cheese you can always use regular white cheddar and spread some creamy horseradish sauce on the cut side of the buns to get a similar flavor.
- If you really love horseradish, you can add creamy horseradish AND use horseradish cheese.
WHAT TO SERVE WITH SLIDERS
These Hawaiian roll roast beef sliders can be served as appetizers or as a meal! If you’re looking for side dish ideas, you can keep them simple and serve them with Baked Sweet Potato Chips or crispy Homemade Onion Rings. I also love to serve these warm sliders with a cold Classic Macaroni Salad or Potato Salad.
WHAT DOES HORSERADISH TASTE LIKE
Horseradish is a spicy root that will definitely put a little tingle on your tongue. If you’re not used to the flavor of this pungent condiment then maybe amend this recipe by using regular cheddar cheese instead of horseradish cheese. You can always add a light layer of horseradish sauce to these sliders to try and control the level of spiciness. You may even consider making half the sliders with horseradish and half without.

Ingredients
- 1 yellow onion peeled & thinly sliced
- 2 tablespoons butter divided
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 12 King's Hawaiian rolls
- 12 slices horseradish cheddar cheese (see note)
- 12 slices roast beef deli style
- ¼ teaspoon dried oregano (optional)
Instructions
- Preheat your oven to 350 degrees F.
- Melt 1 tablespoon of butter in a large skillet over medium-low heat
- Add the onion, brown sugar, and salt to the skillet. Stir and cook until softened about, 5 to 10 minutes. Remove to onions to a bowl and set them aside for now.
- Cut the Hawaiian rolls in half so you have tops and bottoms. (It's easier if you don't pull them apart.) Place the bottom of the rolls in a baking dish.
- Lay 6 slices of cheese over the roll bottoms so they're completely covered.
- Place 1 slice of roast beef on each roll, you will have to bunch it up to make it fit. Spoon about 1 teaspoon of the onions onto each roast beef slice.
- Lay the remaining 6 slices of cheese over the top of the onions. Place the tops of the roll on top of the cheese.
- Melt the remaining 1 tablespoon of butter and then brush over the tops of the rolls. Sprinkle the rolls with oregano if desired.
- Bake for 10-15 minutes or until cheese is melty and the tops of the roll have browned.
- Remove from the oven and cut the sliders apart before serving warm.

I made it but the kids hated the cheese. I did too and i like horseradish. So im going with provolone this time. I only put onions on my own. They like the basic roast beef and cheese alone.

I made them at home tonight. I went to the store and picked up the horseradish cheese the Boar Head kind. I wish I would have just used regular Vermont white cheddar. The kids did not like the horseradish cheese whatsoever and I even put half of what the recipe calls for on their sandwiches. other than that everything else turned out good they just peeled the cheese off of theirs. It was even a bit strong for me and I like horseradish.

Horseradish can be tricky can’t it!! It may be worth it to get the cheese you like for the future and just have a bit of horseradish to spread on the bun instead.

You could make these “Buffalo style” (and no, I don’t mean adding hot sauce!) by using horseradish or horseradish sauce (horseradish mixed with mayo) for the sandwiches, brushing the tops with melted butter, then sprinkling with kosher salt and caraway seeds. In Buffalo, beef on ‘weck is served on hard rolls that have been topped with salt and caraway seeds, known as kimmelwick rolls. Brushing the sandwiches with butter would make the toppings stick. These wouldn’t be exactly like beef on ‘weck but they’d be close, and since you can’t get ‘weck rolls very often outside of Buffalo, this would be a chance for displaced Western New Yorkers to serve something very similar!

Where’s the wonderful and delicious butter sauce that is usually doused on top of all the buns? Much better with it. I mixed mayo with a little horseradish sauce for the bottom halves of the buns and that worked beautifully.

This recipe sounds very good, I might use Provolone cheese and Dijon mustard or Emeril makes a mustard with horseradish sauce.
Question, most recipes for Hawaiian Roll Sliders say to assemble ahead and leave in refrigerator overnight, then bake the next day. I noticed your recipe does not say to do this. Do you always make it and bake immediately?

i have read this recipe five times and it’s making my head hurt! . It calls for 12 slices of cheese, 12 slices of roast beef, and 12 Hawaiian rolls. Then it proceeds to give directions to make only six sliders. Bottoms of rolls are laid out, layout 6 slices of cheese over roll bottoms, followed by 1 slice of roast beef, tsp onions, and another slice of cheese. Then put the tops on. That only makes 6 cuz there are 2 slices of cheese per slider. Should it be lay out 12 slices of cheese, RB, onions, then another 12 slices, then the tops?? For a total of 24 slices of cheese needed? Or does each slice get cut in half? I’ll probably just wing it cuz I want to try this – it sounds great!

Hi Sharon. The recipe is for 12 sliders. Since the cheese slices are larger than the rolls, you only need 6 cheese slices to cover all of the roll bottoms. The rolls should still be attached to each other on the baking pan with the tops removed. Then you use 1 slice of roast beef per roll, just bunching the slice into the general one roll area, top with the onions, then you lay the remaining 6 slices of cheese over the top of the beef, and then place the roll tops (all still attached to each other) on top of the cheese. The easiest way to make an au jus when you haven’t cooked the beef yourself is to just dissolve some beef bouillon paste or cubes into boiling water using half the normal amount of water. Your DH will never know the dif!

If you can’t find it try using plain cheddar cheese and adding the horseradish as a spread. Mix a little horseradish from a jar (usually near the pickles and condiments in the grocery) with a little mayo and spread thinly on the bun.
