These ridiculously good Soda & Onion Pork Chops are baked in a simple mix of Coca-Cola and a combination of dry beef gravy and onion soup mix packets. No matter how busy the week is, all it takes is a half hour and you’ve got a main course that the entire family will go crazy for!
YOU’VE JUST GOT TO TRY IT
At first glance, this recipe may sound a little unorthodox, but it’s seriously delicious. The sweetness of the soda baked down with the savory beef and onion flavors just works. Trust me when I say that you’ve never had a pork chop quite this good.

INGREDIENTS
Protein: You’ll need 1 pound of boneless pork chops that are 1 inch thick (this should be 4 chops). I prefer to use boneless pork chops in this recipe, but it would work just as well with bone-in chops.
Soda: I make my Soda & Onion Pork Chops with regular Coca-Cola, but you can use Coke Zero too.
Veggies: You’ll need 3 shallots for the sauce and some crispy French fried onions and parsley for garnish.
Seasoning: To season this dish you’ll need 2 packets of beef gravy mix and 1 packet of dry onion soup mix. I usually gravitate towards Lipton brand soup mix because I think it has the best flavor.
HOW TO MAKE SODA & ONION PORK CHOPS
STEP ONE: Start by preheating the oven to 350 degrees F. Place the boneless pork chops in the bottom of a 9-inch x 13-inch baking dish in a single layer.
STEP TWO: Pour both cans of Coca-Cola over the pork chops. You want the soda to almost cover the chops, but not fully submerge them. Next, cover the pork chops in the sliced shallots.
STEP THREE: Finally, sprinkle the beef gravy and onion soup mix packets on top of the pork and shallots.
STEP FOUR: Place the dish in the oven and bake it uncovered for about 25 minutes, or until the pork chops reach an internal temperature of 145 degrees F. Garnish the dish with fresh parsley and crispy onions and serve over mashed potatoes!
TIPS FOR SUCCESS
- I always recommend using a meat thermometer, especially when the meat is submerged in a sauce. Pork chops should be cooked to 145 degrees F.
- For this recipe, I like to slice my shallots pretty thin so they cook up well and incorporate better into the sauce.
- If you prefer not to use Coca-Cola, any cola will work just fine. You can also swap in Dr. Pepper, ginger ale, and Sprite.
- If you can’t find beef gravy mix at the store, you can use brown gravy mix instead. I can usually find the Pioneer brand beef gravy at Fry’s and Walmart.
WHAT TO SERVE WITH SODA & ONION PORK CHOPS
The easiest, and dare I say most delicious, way to serve this pork dish is over a mound of homemade Instant Pot Mashed Potatoes. Just because you’re keeping the meal prep easy, doesn’t mean that you can’t add something green to the mix too! You can serve a sweet and crunchy Broccoli Salad or an Easy Wedge Salad. If you don’t want to serve a heavy side like mashed potatoes, consider a simple Baked Brown Rice or Cauliflower Rice.
HOW TO STORE AND REHEAT PORK CHOPS
Since these pork chops are baked in their own soda and onion gravy, they remain moist and tender even after they’re reheated. Store leftover Soda & Onion Pork Chops in an airtight container along with any leftover sauce from the baking dish. They will keep for 3-4 days if stored correctly. Reheat them in the oven along with the sauce at 350 degrees F until they reach an internal temperature of 145 degrees. Try not to keep them in the oven longer than necessary as pork has a tendency to dry out if overcooked.

- 24 ounces Coca-Cola
- 3 shallots peeled and thinly sliced
- 2.82 ounces beef gravy mix (2 packets)
- 1.9 ounces dry onion soup mix (1 packet)
- Fresh parsley chopped, for garnish
- French fried onions for garnish
Instructions
- Preheat your oven to 350 degrees F.
- Place the pork chops in the bottom of a 9-inch x 13-inch baking dish.
- Pour the Coke over the pork chops. (You want the soda to almost cover the pork.) Spread the sliced shallots all over the pork chops.
- Sprinkle the gravy mix and soup packets over the pork chops.
- Bake uncovered for 25 minutes, or until the pork reaches an internal temperature of 145 degrees F.
- Remove from the oven and sprinkle chopped parsley and crispy onions over top. Serve warm with some of the pan sauce spooned over top.
Notes
