Garden Fresh Caprese Turkey Burger
So I have a picky eater! He eats based on color and texture so it’s not that he only eats junk food. He’s a pretty healthy eater but he WILL NOT eat green. I want him to eat the rainbow, you know get in as many different colors of foods and therefor vitamins as possible. There are other things (really a whole list) that he won’t eat but these burgers are my way of sneaking in some green to his diet without him noticing. I’ve added shredded zucchini into the burgers so he is getting green in without the big fight. 🙂
Don’t get me wrong, that’s not the only reason to eat these! They are delicious! I LOVE turkey burgers. They’re such a lean and tasty alternative to beef burgers. Not all turkey burgers are equal though. I think they’re at their best when they’ve been seasoned well and have added yummy ingredients too. In this case I’ve shredded the zucchini and onion to add flavor and moisture while they cook. I also top them with melted mozzerella, tomato and basil. I add the tomato at the same time as the cheese on the grill so that it gets nice and warm. Mmmmm so good. Give these a try this spring and summer as you get ready for bathing suit season and get those picky eaters eating green! 🙂
Ingredients
Burger
- 2 lbs ground turkey
- 1 c grated zucchini
- 1/2 c grated onion
- 1/4 panko bread crumbs
- 1 t. salt
- 1 t. pepper
- 1 t. garlic powder
- 1 t. oregano
Toppings
- fresh mozzarella thick slices
- tomato slices
- fresh basil leaves
- condiments of your choice
Instructions
- in a large mixing bowl combine all burger ingredients
- divide into eight equal portions and form into patties
- place on preheated grill
- cook time will vary by grill and even location on the grill. Once it's easy to get the spatula under the patty without scraping and you see liquids begin to pool on top it's ready to flip.
- cook on the other side until liquids run clear
- once burgers are done add thick slice of mozzarella and sliced tomato
- cover grill and allow cheese to melt
- remove from grill
- add to bun and top with basil leaves and your condiments of choice

I have the same problem at home with my little one. I love how you used the word, rainbow! But this burger is seriously calling my name! I am not a fan of lettuce and I love how you used the fresh basil leaves …so pretty!
