I’ll never forget the first time I had caprese salad. It was at a friend’s apartment, just after we had graduated from college, and I remember thinking it was soooo fancy! I’m not sure if it was really the caprese, or the fact that her apartment was fancy, or the fact that she was fancy. But whatever it was, to this day, caprese always feels special. It’s one of my favorite Mediterranean foods, right alongside olive tapenade and just as easy to make!

Of course, everyone loves caprese salad, but when it comes to parties, there’s nothing better than a delicious dip. People go crazy for dips! And this Caprese Salsa has so much going for it. Made with simple, fresh ingredients like tomatoes, basil, onions, and fresh mozzarella, it’s exactly what I want to eat all summer long. It’s the quintessential summer dip….and couldn’t be more delicious.

- Combine tomatoes, mozzarella, basil, and onion in a small bowl.
