I ate deliciously terrible food over the holidays. It was all very good but was not great for me. That combined with not being able to workout due to sore knees the last few months means that I have put on more weight than I care to admit. Not only that, but I also FEEL awful. My body is sreaming for fresh fruits and vegetables! I have been going to physical therapy and I’m so excited that I’ve been able to start my runs again and I’m also eating a lot of salad. My husband and I are working to eat more cleanly. I like when I can make something from scratch. I decided that I wanted to make my own Italian dressing from scratch!
Of all the salad dressing I could make I think Quick and Easy Italian Dressing is the easiest! I usually have most of the ingredients on hand and it takes just a few minutes to chop and drop into the jar, shake and you’re ready to go! There is so much flavor in this dressing that it makes it easy to want to eat more salad! It’s easy to stick to healthier eating habits when it’s easy to make and tastes amazing!
- 1 tbsp garlic, minced
- 2 tbsp red onion, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 2 tbsp grated parmesan
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp honey
- 1/2 cup extra virgin olive oil
- 1/2 cup white wine vinegar
- add all ingredients into a mason jar and shake vigorously until all ingredients are combined
