Ingredients
Cheese: To make these popper cups, you will need softened cream cheese and a Mexican cheese blend. Regular, low-fat, and Neufchatel cream cheese works great for this recipe.
Veggies: There’s no pop in these poppers without jalapenos! Pick up a few fresh jalapenos. If you’d like to garnish your poppers with more jalapeno, pick up an extra one.
Chips: Grab a bag of Scoops tortilla chips to make these cups. They’re the perfect size for snacking and great for holding in all the cheesy goodness!
How to Make Jalapeno Popper Cups
STEP ONE: Preheat the oven to 350 degrees F. In a medium bowl, beat the cream cheese with a hand mixer or rubber spatula until it’s smooth. Add 1 cup of the shredded Mexican cheese blend and the diced jalapenos to the cream cheese and mix well.
STEP TWO: Fill each chip with 1 teaspoon of the jalapeno popper filling. Once all of the chips have been filled, sprinkle the remaining shredded cheese over the top of each chip.
STEP THREE: Bake the popper cups for 8 minutes. Once out of the oven, top with additional jalapenos, if you wish, and serve immediately.
Tips for Success
- If you prefer to pick up canned diced jalapenos for this recipe, you can! Choose between mild and spicy jalapenos, and be sure to drain and dry the jalapenos before adding them to the cheese to prevent a watery appetizer.
- If you love spice, you can choose to add a Mexican cheese blend that includes pepper jack cheese, go half and half with cheddar and pepper jack, or leave in the jalapeno seeds for some serious kick.

Why are jalapeno poppers not spicy?

Typically, when making jalapeno dishes like poppers, the membrane and seeds are discarded, and the diced or hallowed out jalapeno is used. This gives you all the great jalapeno flavor without the heat that some people find too strong. If you’re a fan of the heat, leave the membrane, the section of the jalapeno that holds the seeds. Otherwise, be sure to cut all of it and the seeds away.

Ingredients
- 75 scoop-shaped tortilla chips
- 8 ounces cream cheese softened
- 2 cups Mexican cheese blend shredded, divided
- 3 jalapenos seeded and diced
- Diced or sliced jalapenos for garnish
Instructions
- Preheat your oven to 350 degrees F.
- Beat the cream cheese in a medium mixing bowl with a hand mixer until smooth. (This can also be done with a rubber spatula.) Add 1 cup of shredded cheese and the diced jalapenos. Mix until evenly combined.
- Scoop 1 teaspoon of the popper filling into each tortilla chip scoop. Divide the remaining 1 cup of cheese evenly over the top of the chip cups.
- Bake for 8 minutes until the cheese has melted and the filling is warmed.
- Remove from the oven and serve as it or top with more diced/sliced jalapenos for garnish.
