These Jalapeño Popper Cups only have FOUR ingredients, but they are fantastic! Make just four or make twenty-four!
I am one of those people that is of the firm belief that appetizers should be it’s own section on the food pyramid. You know, like dairy, bread, fruits, veggies, meat . . . APPETIZERS!
Probably because of the whole calorie counting thing. You know how licks and bites of things don’t count towards your total calories, right? #dontburstmybubble Like if you are baking and you leave a quarter of the cookie dough unbaked and eat it, it’s totally cool. Those calories don’t count.
Well, since appetizers are basically just licks and bites of things . . . the calories totally don’t count!! #winning
One of my favorite types of food to make is Game Day Food. There are so many awesome flavors and recipes to be made! But one of the best by far is Jalapeño Popper. I love the heat of the jalapeño with the coolness of the cream cheese. It’s so so good! And there are so many different ways you can make it, like with these pinwheels, or this beer bread, or baked potatoes, as a bloody mary (OMG), or a dip. Yumm!
These little guys are ridiculously yummy, and SO simple. Does it get much better than a recipe that has less than five ingredients but tastes so good?? The other thing that I love about these Jalapeño Popper Cups is that if you just want to make four for an afternoon snack, you totally can. Or you know, you can make 24 for an afternoon snack, and I totally won’t judge you. And these will be perfect for game day! They have a little kick, but you know, with a big glass of beer, you’ll be good. 🙂
Ingredients
- 24 scoop shaped tortilla chips
- 24 pickled jalapeños
- 4 ounces cream cheese
- 1/2 cup mozzarella cheese
Instructions
- Preheat your oven to 350 degrees.
- Put a jalapeno slice in the bottom of each scoop. Add about a half a teaspoon of cream cheese to each scoop. Top each scoop with a sprinkle of mozzarella cheese.
- Bake for eight minutes.
