When you hear a “hash” recipe, think of diced, fried potatoes! Suddenly, it sounds so much tastier!
What’s truly amazing about hash recipes is their flexibility. You need potatoes, onions, and meat to make a true hash. It can be white potatoes, bacon, and green onion. Or yams, ham and shallots. Or, in this case, sweet potatoes, chicken sausage and yellow onions. Of course, you can add herbs and seasonings to your heart’s content and serve them with an “over-easy” egg on top.

Seasoning: Finish this skillet hash with salt, pepper, and garlic powder.
How to Make Chicken Apple Sausage & Sweet Potato Hash
STEP ONE: Preheat the oven to 350 degrees F. In a large oven-proof skillet (I use cast iron), cook the bacon to your desired crispness. Remove from skillet and drain on paper towel. Drain off the excess grease from the pan, but leave one tablespoon in the skillet.
STEP TWO: Add the onion to the skillet and cook for a couple of minutes until translucent. Then, push the onion to the outside edges of the pan and add the diced sweet potato, salt, pepper, and garlic powder. Arrange the sweet potatoes into a single layer and cook without stirring for about 5 minutes to crisp up the bottoms and give them a golden-orange color.
STEP THREE: Flip the sweet potatoes and cook for 5 minutes without stirring. Repeat this process until all sides are browned and the potatoes are tender. Stir the onions back into the potatoes. Chop up the bacon and chicken apple sausage and add them to the skillet.
STEP FOUR: Make four wells/divots in the hash and crack an egg into each well.
STEP FIVE: Place the skillet into the oven and bake for 10-15 minutes until the eggs reach a desired consistency. Remove from the oven, top with some chopped parsley, and dig in!
Tips for Success
- As a substitute for the homemade chicken apple sausage, Italian sausage with fennel works beautifully!
- There are multiple ways to add an “over easy” egg to the top of your has, from poaching to frying to baking – find what works best for you!

Are Yams and Sweet Potatoes the Same?
Let me tell you, they may look similar, but they are not the same. Yams have tough skin that feels like tree bark, and the inside—though still bright orange—is starchy and neutral in flavor, more like a Russet potato.
On the other hand, sweet potatoes have smooth, reddish-brown skin, and the inside has a soft, moist texture and rich, sweet flavor. Sure, you can substitute yams for sweet potatoes in a pinch, but they need much more “seasoning up” to live up to your holiday food standards.

Hash is an all-in-one meal containing potatoes, meat, and onion—all diced up like hashbrowns and seasoned in various ways. So, sweet potato hash is the sweet potato variety of this recipe!

Ingredients
- 4 strips bacon
- 1 yellow onion peeled and diced
- 4 cups sweet potato peeled and cut into 1/2-inch cubes
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 4 patties Homemade Chicken Apple Sausage cooked
- 4 large eggs
Instructions
- Preheat the oven to 350 degrees F.
- Place a large oven-safe skillet over medium heat, and once hot add the bacon. Cook until crispy, flipping as needed. Transfer to a paper towel-lined plate to drain. Drain the bacon grease, but leave 1 tablespoon in the pan.
- Add the onion to the skillet and cook for 1-2 minutes, stirring occasionally, until softened. Move the onion to the outer edges of the pan.
- Add the sweet potato, garlic powder, salt, and pepper. Arrange the sweet potatoes in a single layer. Cook for 5 minutes without stirring.
- Flip the sweet potatoes over and cook for another 5 minutes without flipping. Repeat until all sides have some color and the sweet potatoes are tender. Stir the onions and sweet potatoes together.
- Chop the bacon and chicken apple sausage into small pieces. Stir them into the sweet potatoes.
- Make four wells/divots in the hash and then crack an egg into each well.
- Place the skillet in the oven and bake for 10-15 minutes or until the eggs are cooked and the yolks are thick but runny.
- Remove from oven. Use a spatula to portion one egg onto each plate and then divide the remaining hash evenly. Serve warm and enjoy!
