Ingredients
Pudding: To make this fluff, you will need coconut cream instant pudding mix. Make sure the box says instant, not cook and serve.
Fruit: Pick up canned pineapple tidbits or chunks in pineapple juice. You will also need halved maraschino cherries to fold in the fluff and whole cherries to use as garnish.
Whipped Cream: For this dessert, you can make Homemade Cool Whip or buy a tub of whipped cream from the store.
Caramel Sauce: Just like the whipped topping, you can make Homemade Salted Caramel Sauce or purchase a bottle. Both are delicious options.
How to Make Pineapple Upside Down Fluff
STEP ONE: Mix the coconut pudding mix, the pineapple chunks, and the pineapple juice in a medium bowl and mix well.
STEP TWO: Add the Cool Whip to a large mixing bowl. Then, add the pineapple/pudding mixture and Maraschino cherry halves to the Cool Whip. Gently fold everything together with a rubber spatula.
STEP THREE: Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
STEP FOUR: After an hour, spoon the fluff into bowls and drizzle caramel sauce over the top. Add a cherry for garnish, and serve immediately!
Tips for Success
- Don’t strain the pineapple juice from the pineapple chunks. Both are needed for this recipe.
- Be sure to use homemade whipped cream with a stabilizer, like gelatin or store-bought Cool Whip, to prevent the cream from deflating and leaving your fluff flat.
- Purchase any type of pineapple for this recipe, rings, tidbits, chunks, etc. Cut the pineapple into small pieces to easily fold into the fluff.
- Pineapple Upside Down Fluff is best served fresh, but leftovers can be stored in an airtight container in the fridge for up to two days.
Can I make crushed pineapple from fresh pineapple?
There’s nothing better than fresh fruit, although canned pineapple is pretty darn great, so if you’ve got a fresh pineapple to use in this recipe, then do it! Core the pineapple and cut away the outer portion of it to start. You can cut the pineapple into rings and then into chunks to make the pineapple small enough for the salad. You can also cut pieces and toss them into a food processor. Pulse the processor a few times until you reach the size you like. Remember to save the pineapple juice to mix with the pudding for this recipe.
Where did fluff salads come from?
No fluff salads are more famous than the fruity Ambrosia and pistachio-filled Watergate salad. Ambrosia salad is almost 100 years older than the Watergate salad and is believed to have originated in the South in the late 1860s. Watergate salad was created in the 1970s after the invention of instant pistachio pudding, and some people claim it was named after the political scandal of the time. Both salads feature pineapple, marshmallows, whipped cream, cherries, and chopped nuts. These salads opened the Midwest door, where fluff salads are more favored by far, to serving fluff salads as a side dish for all holidays, funerals, get-togethers, and large family dinners.

- 3.4 ounces coconut cream instant pudding mix
- 20 ounces pineapple tidbits with juice
- 3 cups Cool Whip (thawed if store-bought)
- 20 ounces maraschino cherries drained and sliced in half
- ¼ cup salted caramel sauce plus more to taste
Instructions
- In a medium mixing bowl, stir together the coconut cream pudding mix, pineapple chunks, and pineapple juice from the can until completely mixed together.
- Add the Cool Whip to a large mixing bowl. Fold in the pineapple/pudding mixture and the cherry halves. (Reserve 1-2 cherries for garnish later.)
- Cover with plastic wrap and chill in the fridge for at least 1 hour.
- Transfer the fluff to a serving bowl or leave it in the mixing bowl. Drizzle the top with homemade salted caramel sauce, add a cherry or two for garnish, and enjoy!
