In a medium mixing bowl, stir together the coconut cream pudding mix, pineapple chunks, and pineapple juice from the can until completely mixed together.
Add the Cool Whip to a large mixing bowl. Fold in the pineapple/pudding mixture and the cherry halves. (Reserve 1-2 cherries for garnish later.)
Cover with plastic wrap and chill in the fridge for at least 1 hour.
Transfer the fluff to a serving bowl or leave it in the mixing bowl. Drizzle the top with homemade salted caramel sauce, add a cherry or two for garnish, and enjoy!
