Stacey and I are getting together tonight for a Happy Hour. It’s so much fun to get together with friends and unwind at the end of the week. The kids have a great time and we get to snack on new food that we’re trying out. Tonight I’m bringing this drink and a cheesy bread that I’ll share with you all next week.
This drink came out of an inventory of the liquor cabinet. It has been so hot here lately. We hit 100 last weekend and I decided to layout by the pool and venture in to the cold 78 degree pool. I love to have a fruity drink when I’m relaxing in the pool, so the liquor cabinet raid began. I found some Pineapple Rum that we hadn’t used and we had some cranberry juice and orange juice on hand so the Pineapple Breeze was born.
If you want to make a non alcoholic version of this you could substitute pineapple flavored coconut water for the rum and have a nice and refreshing mocktail as well. What do you like to drink out by the pool?
- 2 oz. pineapple rum
- 1.5 oz cranberry juice
- 0.5 oz orange juice
- twist of lime
- crushed ice
- frozen pineapple chunks, optional to keep drink cold
- combine all ingredients and pour over ice
- add frozen pineapple chunks to glass in place of ice to keep drink cold without diluting you drink.
