To Make the Rice Krispie Treats
Dry Ingredients: For this recipe, you will need Rice Krispies, mini marshmallows, chocolate chips, and cocoa powder.
Wet Ingredients: You will also need butter for this dish, so use what you have on hand.
To Make the Frosting
Dry Ingredients: The base for this mint buttercream frosting recipe is powdered sugar.
Wet Ingredients: Set out butter and a little water to come to room temperature. You will also be using mint extract and green food coloring.
How to Make Mint Chocolate Rice Krispie Treats
STEP ONE: Line a 13×9 baking dish with enough parchment paper to hang over the edges of the dish. Grease the foil. Melt the butter, cocoa powder, and marshmallows in a large pot over medium heat.
STEP TWO: Once melted, remove the pan from the heat and stir in the chocolate chips until melted. Add the rice krispies treats and stir until they’re evenly coated in the chocolate marshmallow mixture.
STEP THREE: Pour the chocolate rice krispies treats mixture into the prepared pan and press into an even layer. Allow the rice krispies to cool before frosting. It’ll take about 30 minutes to 1 hour.
STEP FOUR: To make the frosting, beat the butter in a stand mixer or in a mixing bowl with a hand mixer on low speed. Slowly add the powdered sugar. Once the powdered sugar has been mixed in, turn the mixer to high and beat until the frosting is pale and fluffy. Add the mint extract and food coloring and mix to combine.
STEP FIVE: Frost the Rice Krispies in the pan. Then, use the parchment paper to remove them from the pan. Cut the block into individual treats. Serve them immediately, or refrigerate the squares until you are ready to serve them. Just be sure to put them on the counter for about 30 minutes to come back up to room temperature first.
Tips for Success
- If you want the frosting to be a deeper green, add more food coloring until you reach your desired shade.
- These mint chocolate Rice Krispie treats are rich and full of chocolate, so cutting them into small squares is a good idea.
- After refrigerating them, allow the krispie treats to come to room temperature before serving.
- If you only have jumbo or regular-sized marshmallows in your cabinet, feel free to use those! Simply cut them into smaller pieces using scissors before tossing them into the pot.
Why do my Rice Krispie bars get so hard?
The possible culprit behind tough rice krispie bars is high heat or too much pressure. When melting the butter, cocoa powder, and marshmallows, avoid cranking up the heat to cook everything faster. Marshmallows cooked at high temperatures and then cooled can become tough and almost rock hard. So keep the heat to a medium or medium-low, and the treats should be firm but soft. Secondly, try not to press everything together too firmly when pressing the mixture into the pan. You don’t want to press all of the air out and make dense bricks! Lightly press the rice krispie mixture together so that it is even and flat, but there are still little air pockets for lightness.

Ingredients
Chocolate Rice Krispie Treats
- ½ cup butter
- 10 ounces mini marshmallows
- 3 tablespoons unsweetened cocoa powder
- 1 cup semi-sweet chocolate chips
- 6 ½ cups rice krispies cereal
Mint Frosting
- ¾ cup butter room temp.
- 3 cups powdered sugar
- 1 ½ tablespoons water
- ½ teaspoon peppermint extract
- 6 drops green food coloring
Instructions
Chocolate Rice Krispie Treats
- Line a 9-inch x 13-inch baking dish with parchment paper, making sure some foil is hanging over the edges of the dish. Spray the foil with non-stick cooking spray. Set aside.
- Place a large pot over medium heat. Add the butter. Once melted, add the marshmallows and cocoa powder to the pot. Stir frequently until the marshmallows are completely melted.
- Remove the pot from the heat and stir in the chocolate chips until melted and combined. Pour in the rice krispies and stir until evenly coated in the chocolate marshmallow mixture.
- Transfer the chocolate rice krispies to the foil-lined dish and press down into an even layer. You can use your hands (be careful, they're hot!) or a rubber spatula.
- Allow the treats to cool completely, 30 minutes to 1 hour.
Mint Frosting
- Once the treats are set, add the butter to the bowl of a stand mixer (or large mixing bowl with a hand mixer). Run on low speed and add the powdered sugar 1 cup at a time, mixing between additions.
- Once the frosting pulls away from the sides of the bowl, turn the mixer to high and beat until it lightens in color and becomes fluffy.
- Pour in the water, peppermint extract, and food coloring. Mix until evenly combined and the frosting is green. (You can add more food coloring until your desired shade of green is reached.) Spread the frosting over the top of the rice krispie treats.
- Use the foil to lift the treat from the baking dish. Cut into squares – I do a 4×5 grid for 20 treats.
