You know those extra-crazy days when you can’t face “what’s for dinner?” but you don’t want to grab fast food burgers AGAIN? That’s when these Chicken Fajita Foil Packets will save your sanity!
This recipe requires only a few minutes of chopping chicken and a couple of veggies, seasoning, and wrapping them up! When you’re ready to cook, toss on the grill for 30 minutes. They’re ideal for busy nights, campouts, pool parties… you name it! And when dinner is over, toss the foil, and clean up is done!

How to Make Grilled Chicken Fajita Foil Packet Meals
STEP ONE: Slice the chicken breasts, onion, and bell peppers into strips and place them into a large mixing bowl. Mix the spices in a small bowl.
STEP TWO: Sprinkle the fajita seasoning over the chicken and veggies and toss until nicely coated.
STEP THREE: Divide the fajitas evenly between foil squares and then wrap them in the foil.
STEP FOUR: Cook on a preheated grill over indirect heat or in a 400-degree F oven for 20-25 minutes until chicken is done. Carefully open the foil packs and serve warm.
Tips for Success
- To keep your chicken from drying out, slice the breast strips thicker than the veggie strips and cut across the chicken’s grain. This makes them more tender.
- Versatility is a benefit of these dinner packets! Throw in sliced mushrooms or tomatoes if you like. Or go with beef strips instead of chicken. Eat these right out of the packet with a fork or load up some tortilla shells with the packet contents and garnish with cilantro, lime, and sour cream.
Is there a healthier alternative to aluminum foil?
Many people don’t want the risk of their food touching aluminum – no problem! Place a layer of parchment paper between the aluminum foil and the food before you wrap up the packets. The parchment will do fine in the oven and grill and protect your food from the metal foil.
How far ahead of time can I make foil packet meals?
Foil packet meals with chicken can be made up to 2 days ahead. Beef meals can be done three days ahead. Follow the preparation instructions in the recipe, but add a second layer of aluminum foil. Store in the fridge (or a cooler if you’re going camping, make sure your cooler stays cold.) When it’s dinner time, you must pop the packets straight onto the grill or in the oven!

- 1.5 pounds boneless skinless chicken breasts
- 3 bell peppers (I like to use a few different colors)
- 1 red onion
- 2 tablespoon chili powder
- 2 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- Sour cream for serving
- Cilantro chopped, for serving
- Lime wedges for serving
- Flour tortillas for serving
Instructions
- Core the bell peppers and peel the red onion. Then cut the veggies into strips. Transfer to a large mixing bowl. Cut the chicken breasts into strips and add them to the bowl with the veggies.
- Add the chili powder, cumin, garlic powder, onion powder, and salt to a small bowl. Stir until combined. Pour over the chicken and veggies. And then use your hand to toss until everything is well coated in the spice blend.
- Lay out four large squares of foil on the counter. Divide the chicken and veggies evenly between the foil. Wrap the foil up by first folding the sides over the top so that they overlap, and then roll up the ends so nothing can fall out.
- Cook on a preheated grill over indirect heat or in the oven at 400 degrees F for 20 – 25 minutes or until chicken is cooked through.
- Carefully open the foil packets (there will be steam). Transfer the fajitas to a serving platter along with tortillas, or top with sour cream, cilantro, and serve with lime wedges right in the foil.
