Chicken Fajita Foil Packet Meal is perfect for grilling out on a busy weeknight. Almost no clean-up required!
It’s summertime, that means laying out in the sunshine, or splashing in the pool, or taking the kids on fun family outings. No one wants to have to cut all of that short so they can go home and start cooking. Am I right? I grill out a lot once the weather is nice, but that doesn’t mean I want to spend a lot of time doing it. For me grilling isn’t only about that awesome grilled flavor, it is about saving mom and dad a little time so we can spend more time doing the fun stuff.
One of my solutions for getting dinner on the table without a lot of work is this chicken fajita foil packet meal. It’s a whole dinner all wrapped up in one packet and cooked together on the grill. I cut up chicken breasts, red onions, green, red, and yellow bell peppers, and then put them all in a bowl and toss them with a mix of chili powder, cumin, garlic powder, onion powder, and salt. I like to make my own spice mix and I’m sharing it with you today but if you want to cut out that step, just buy a packet of taco seasoning or fajita seasoning. It works just as well!
Once all of your chicken and veggies are coated with the spices layout some aluminum foil and pour the mixture onto the foil and wrap it up tightly. I know some people don’t like the idea of letting aluminum foil touch their food as it cooks but don’t let that stop you from making foil packet meals. All you need to do is place a layer of parchment paper between the foil and the food and wrap everything up. That will keep your food separate from the foil and the layer of foil on the outside will keep the paper from burning on the grill.
Put the foil packet on the grill slightly to the side of the flames so it cooks over indirect heat. Depending on your grill it should take 20-25 minutes but just take a peek after 20 minutes and see if the chicken is ready. Once it is completely cooked through take it off the grill and serve it with some tortillas or rice.
And if you have a rainy day don’t let that stop you from making this simple foil packet meal just put the foil packet on a baking sheet and bake in the oven on 400°F for 20 – 25 minutes.

Ingredients
- 1.5 lbs Chicken Breasts cut into strips
- 3 Bell Peppers I used a mix of red, green, and yellow
- 1 Red Onion
- 2 Tbsp Chili Powder
- 2 Tbsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Salt
Instructions
- Cut chicken breasts, bell peppers, and onion into strips.
- Mix spices together in a bowl.
- Toss spices, chicken, and vegetables together and wrap them in foil.
- Cook on grill over indirect heat for 20 -25 minutes OR in oven at 400°F for 20 - 25 minutes or until chicken is cooked through.
- Serve with tortillas.
