Some nights I just grab a few of my favorite keto desserts out of the fridge and call it good. Don’t get me wrong. I love baking, but some nights I want something easy for us all to enjoy. This Fried Ice Cream is the best of both worlds! It may seem complicated, but once you know how to make it, you’ll want to keep some in your freezer all the time!

One of my favorite things about deep fried ice cream is the flavor possibilities. While the Mexican restaurant fried ice cream is usually vanilla that doesn’t mean you can’t mix things up! We love grabbing a few different pints of O Organics® ice cream when we go shopping at Albertsons. Vanilla always makes the list for this recipe, but butter pecan, cookies & cream, sea salt caramel, and mochaccino are tasty options too. Don’t be afraid to experiment! Since July is national ice cream month, we’ve been having a great time trying all kinds of different fried ice cream combinations. The current favorites are:
- vanilla ice cream with served with angel food cake, strawberries, and whipped cream
- cookies & cream ice cream served with chocolate sauce, caramel sauce, cinnamon, whipped cream, and cherries
When I want a quick and easy option that doesn’t require cooking, I reach for O Organics fruit bars and pop-ups. My youngest loves pretty much every fruit there is and fruity desserts. These bars and pop-ups are great when we go camping or to the beach. I throw them in the cooler right next to the ice. My whole family loves their fresh fruit taste. Because let’s be honest, sometimes kids can’t wait overnight for Mexican fried ice cream to freeze. They want a treat now.
How to make fried ice cream

Place crushed frosted flakes (or corn flakes) in a shallow dish. Stir in sugar and cinnamon until evenly combined.

Scoop out a large spoonful of ice cream (about 1 cup or 1/2 pint) using a large ice cream scoop. Roll the ice cream in the cereal crumb mixture.

Place balls of ice cream on a parchment paper-lined baking sheet. Freeze for at least 8 hours for best results.
**DO NOT skip freezing or reduce the freezing time, or your ice cream balls will turn into a gooey mess.** -
Heat oil to 400 degrees. in a large pot of deep fryer.

Place one ice cream ball in the oil at a time for no longer than 10 seconds, until golden brown. This is a fast process to the coating gets crispy and the ice cream stays frozen under the crust. Remove ice cream from oil and transfer to a serving bowl.

Garnish with your favorite toppings and serve immediately.
How does fried ice cream not melt?
That was my big question the first time I heard of this dessert. I didn’t understand how you could fry something that’s frozen and it wouldn’t melt. The trick is getting your ice cream cold, REALLY cold. Then it’s fried quickly so the hot oil doesn’t get a chance to melt the ice cream. Boom. A contradiction on a plate.
How does fried ice cream work?
Ice cream is scooped out of the carton and rolled in a crust of frosted flakes, cornflakes, or dipped in batter (this is done just before frying) and then frozen overnight on a baking sheet in the freezer. This gets the ice cream extra cold so it doesn’t melt during frying. Ice cream freezes more solid when it’s in individual scoops versus a whole carton. Then it’s a matter of frying quickly to crisp the crust and you’re set! Top with whipped cream, fruit, and chocolate or caramel sauce.
Way easier than you thought, right?! The best part is that you can make a few of the ice cream balls and store them in the freezer to fry up later. After the ice cream has frozen overnight, wrap each ball in plastic wrap and then place in a zip-top plastic bag before returning to the freezer. The plastic wrap keeps the crust from rubbing off when the bag gets jostled in the freezer. It happens, I learned the hard way. When you’re ready for dessert heat up the oil, take out an ice cream ball, unwrap it, and then flash fry. This recipe is sure to become one of your family’s favorite desserts!

Notes
- You can make a batch of the ice cream balls and keep them in the freezer until you're ready to fry. After the initial freeze, wrap any extra ice cream balls in plastic wrap and place in a Ziploc bag before returning to the freezer.
- If you're frying the ice cream in a pot (vs a deep fryer) be sure there is enough oil to submerge the whole ice cream ball. You have a very short time to fry it and want to make sure the whole thing gets cooked.
