How to Make Cheesy Bacon & Egg Muffins
STEP ONE: Preheat oven to 350 F. Spray a regular muffin tin with non-stick cooking spray. In a large bowl, whisk eggs, milk, salt & pepper.
STEP TWO: Once blended, stir in the shredded cheese and bacon bits.
STEP THREE: Pour evenly into the muffin pan.
STEP FOUR: Bake for 25 minutes (slightly more or less, depending on your desired firmness.) Enjoy immediately, or allow to cool, cover, and refrigerate for tomorrow morning!
Tips for Success
- Place a glass pan half-filled with water on the bottom rack of the oven before baking. This creates steam inside the oven and gives the muffins a less “eggy” texture.
- Eggs are notorious for sticking, so be sure to spray or oil the pan. This will allow the muffins to slide out perfectly!
- To make these bites in a “mini muffin” pan, reduce the cooking time to 20 minutes. (This recipe will make about 18-20 mini muffins)
- Make more adult versions of these muffins by adding onion, peppers, mushrooms, herbs, or spinach. You almost can’t make a mistake with these!
