Baked Tacos are SO scrumptious—soft, warm, flavorful filling inside a crispy rolled shell. Amazing! They’re healthy and easy to make, scrambling three forms of protein with fresh spinach in a yummy tortilla shell. And maybe best of all, these ham and egg taquitos are a breeze to freeze, reheat, and eat—even in the car—without making a mess!

Ingredients

Protein: Meat, cheese (we’re using ham and cheddar here ) and eggs make up the filling for these breakfast taquitos.

Veggies: Baby spinach has a mild flavor but adds tons of nutrition to our taquitos.

Tortillas: Flour tortillas work best for breakfast rolls up! We used white flour, but whole wheat would also be a nice, healthy choice!

Oil: We’ll use butter to scramble the eggs and add rich flavor.

Seasonings: You can use any seasonings you like in these ham and egg taquitos, from salt and pepper to garlic powder, parsley, basil, or even oregano!

How to Make Breakfast Taquitos

STEP ONE: Whisk the eggs together in a bowl. Melt the butter in a large skillet over medium heat and scramble the eggs. Remove from heat when still slightly soft. Add any seasonings and stir in the spinach leaves. Allow to cool.

STEP TWO: Preheat oven to 350 degrees F. Lay out one tortilla on a work surface. Spoon 1/8 of the egg & spinach mix down the center. Top with diced ham and grated cheese. Roll up tightly. Repeat with the remaining ingredients.

STEP THREE: Lay the taquitos seam down in a baking dish. Gently spray the tortillas with olive oil or avocado oil spray.

STEP FOUR: Bake for 15-20 minutes until the cheese is melted and the tortillas are golden brown and crispy! Serve immediately with salsa, or allow to cool and freeze for grab-and-go meals later!

Tips for Success

  • Both deli ham and leftover baked ham work equally well in these taquitos.
  • These breakfast roll-ups could also be made with turkey, sausage, pastrami, pepperoni, or bacon.
  • The recipe calls for the cheese of your choice, so experiment! Sure. American melts well, but sharp cheddar is WOW. Gouda is GREAT. And Pepper Jack spices things up. Try them all!
  • In place of spinach, try green onion, bell peppers, or slivers of zucchini!
  • These are perfect portable breakfasts, but they also make an excellent addition to lunch boxes. 
  • Serve these with a side of lime sour cream, salsa verde, guacamole or hot sauce!

How Do I Freeze Breakfast Taquitos?

You can freeze the entire pan full together by allowing it to cool, then double-wrapping it in plastic, surrounded by an outer layer of foil. They will keep in the freezer for 2 months. But if you want the ultimate Grab & Go experience, allow the taquitos to cool, then individually wrap each one in plastic cling wrap and freeze.

What’s the Best Way to Reheat Ham & Egg Taquitos?

If the taquitos are individually frozen, simply grab one out of the freezer, microwave for 3 minutes, and you’re ready to walk out the door with a soft, cheesy breakfast roll-up!

If you want a crispier reheat, thaw in the fridge overnight. In the morning, unroll from the plastic and air-fry or bake in the toaster oven at 350 degrees F for 4-6 minutes. Wrap in a paper towel for mess-free eating and you’re ready to walk out the door!

Ingredients
  

  • 8 eggs
  • 1 ½ tablespoons butter
  • Salt and pepper to taste
  • 2 cups baby spinach
  • 5 ounces ham roughly chopped
  • 8 soft taco-size flour tortillas
  • 1 ½ cups Monterey jack cheese shredded
  • Oil spray

Instructions
 

  • Preheat oven to 350 degrees F. Whisk the eggs in a bowl.
  • Melt the butter in a large skillet over medium heat. Add the eggs and heat, scrambling them, until just cooked. Remove from the heat. Add salt and pepper, then stir in the spinach. Allow to cool.
  • Lay out one tortilla on a work surface. Spoon 1/8 of the egg & spinach mixture down the middle, then top with ham and cheese. Roll up tightly, finishing with the seam down. Repeat with the remaining ingredients.
  • Place the taquitos on a baking sheet seam side down. Spray the tortillas generously with oil.
  • Bake for 15 to 20 minutes or until golden. Remove from the oven and serve immediately!

Notes

Freezing: Allow the taquitos to cool then wrap in cling wrap, place int a food storage bag, and freeze for up to 2 months. To serve, thaw (or defrost in microwave) then reheat in the microwave or oven.
