Cheesy Bacon & Egg Muffins are a quick & easy breakfast recipe for busy mornings! Grab and go egg muffins loaded with cheese and bacon!
Last summer my work decided that we would start a new thing called “summer hours”. This means that we start the day a 1/2 hour earlier Monday – Thursday and work a 1/2 hour later Monday – Thursday. This results in us being done at noon on Friday. Sounds all great and glorious doesn’t it? Especially when this lady likes to take off to the lake on Friday afternoons. A long weekend at the lake. Now that I can get used to that! Then I decided to have another child. Now as the summer hours start I kind of start to panic. Let’s just say that the hubs is long gone by the time it’s time to get the kids up and ready so it means I fly solo in the mornings. I’ve already been getting up at 5 am to get out the door and to work on time so that means I need to figure out how to cut a 1/2 hour of time out of my morning routine to get to work on time. Unfortunately the only thing I can come up with is my morning workout. This kind of makes me want to cry but I have no other options! I guess I’ll just have to get creative with getting some exercise in!
 These lovely summer hours also mean that breakfast is a grab and go kind of thing. That’s why I love these little egg muffins. They are absolutely perfect. I make them on the weekends and then warm them up and eat them on the way to work. They are light, fluffy, and delicious. Kind of like scrambled eggs in a muffin form. Plus they are so versatile. You can add some spinach in or peppers or whatever your little heart desires! Love mushrooms? Go for it! If you are like me and get the morning munchies around 10 am they are perfect for solving that problem too. Loaded with protein that will hold you over to lunch!
The best thing about these muffins is the whole family will love them. In fact I have to either double the recipe or make two batches most weeks because my daughter and husband like to munch on my stash which I’m totally ok with because they are so light and healthy for you!

Instructions
- Preheat oven to 350 degrees. Spray muffin tin with non stick cooking spray.
- In a large mixing bowl whisk together eggs, milk, salt and pepper. Stir in cheese and bacon bits.
- Pour mixture into 12 muffins cups.
- Bake for 25 minutes or until muffins are set in the middle.

Thank you, thank you, thank you! My hubby and I are members of a Wood Turning group in Idaho. My husband writes the monthly newsletter, and I bake for it, and spoil all the members.
