Ingredients
Crust: The outer shell of these little gems is made with a pre-made refrigerated pie crust – this could not be easier!
Sauce: A jar of your favorite pizza sauce – bought or homemade – melds the ingredients together perfectly.
Cheese: Some shredded mozzarella and a sprinkle of parmesan make this pepperoni roll ooey, gooey inside and crispy, cheesy outside!
Extras: An egg will “seal” the crust together, and a sprinkle of garlic salt will add additional flavor.
How to Make Pepperoni Pizza Bites
STEP ONE: Preheat oven to 350 F. Line a large baking sheet with a silicon mat or parchment paper. Unroll the pie crust dough and flatten it thin with a rolling pin. Use a round cookie cutter (about 3 inches) and cut out as many circles as possible. Place the dough circles on the baking sheet. Work the leftover dough back together and roll it out flat again. Cut more circles. Repeat until there’s no dough left.
STEP TWO: Whisk the egg and water together in a small bowl and brush this mixture around the edges of each dough circle.
STEP THREE: Spread pizza sauce over one-half of each circle, but don’t go over the edges where the egg wash is. Add a bit of mozzarella and mini-pepperonis over the sauce. Fold the empty half of the dough over the filled half, crimping the edges together with a fork or your fingers. Seal well.
STEP FOUR: Brush the tops with more of the egg wash. Sprinkle each one with garlic salt and parmesan cheese.
STEP FIVE: Bake for 15 minutes or until golden brown. Allow to cool a few minutes before serving (the interior gets hot!) Enjoy these alone, with extra pizza sauce for dipping, or on a full appetizer tray with other yummies!
Tips for Success
- A wide-mouth glass or cup can work if you don’t have a cookie or biscuit cutter!
- Don’t overfill the mini-circle crusts – a little goes a long way!
- Regular-size pepperoni is fine to use – just chop them into quarters!
- Add a sprinkle of Italian seasoning to the sauce for a more intense flavor.
- Mozzarella and parmesan are traditional pizza cheeses, but provolone, ricotta, and even cheddar taste fantastic as well!
- For dipping, serve with additional pizza sauce, marinara, ranch, or garlic butter!
- Allow pizza bites to cool for 5-10 minutes before biting into them – the cheese and sauce get bubbly hot!
Can I Make Pizza Rolls Ahead of Time?
Absolutely! If you’re prepping for an event, simply assemble the rolls, but stop just after you crimp the edges. Store in an airtight container for 24-36 hours. When you’re ready to bake, brush on the egg wash, season with garlic salt and parmesan, and bake! Easy!
Can You Make Pizza Bites in the Air Fryer?
Pepperoni Pizza Bites toast up beautifully in the air fryer! Set the temp to 380 degrees F, then air fry for 6-7 minutes or until the dough is golden brown and lightly crispy. Remember that, like ovens, all air fryers are different, so keep an eye on the pizza bites as they cook.

Ingredients
- 15 ounces refrigerated pie crust (1 package with 2 crusts)
- 1 large egg beaten
- 1 tablespoon water
- ½ cup pizza sauce
- ½ cup mozzarella shredded
- ¼ cup mini pepperoni
- 1 tablespoon garlic salt
- ¼ cup parmesan shredded
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicon mat or parchment paper. Set aside.
- Carefully unroll the pie crust dough. Using a rolling pin, roll out any rough spots to flatten them. Use a 3-inch round cookie cutter to cut out 8 circles of dough. Re-roll the remaining pie crust dough and cut out more circles. (I usually get about 20 total.)
- Place the pie crust circles onto the prepared baking sheet. (You will need to cook in batches.) In a small bowl, whisk together the egg and water. Brush this egg wash around the edge of each circle.
- Spread 1/2 teaspoon of pizza sauce on one half of each circle, making sure not to go over the egg wash. Then place 1 teaspoon of mozzarella cheese over the pizza sauce and then 3-4 mini pepperoni over the cheese.
- Fold the bare side of the pie dough over the top, making a half-circle. Gently press the edges together with your fingers. Use a fork to crimp the edges together so they are sealed.
- Brush each pizza bite with some of the egg wash. Then sprinkle the top with garlic salt and Parmesan cheese.
- Bake for 15 to 17 minutes, or until golden brown. Remove from the oven and serve warm with extra pizza sauce for dipping.
