It’s All About the Low-Carb Pizza Crust!
Pizza toppings are carb-friendly. Most meats, cheeses, and veggies have zero carbs. It’s that crust that gets you! But…pizza is not pizza without the crust. Am I right?
And while some pizzerias, like Papa John’s and Pizza Hut, offer ‘crustless bowls”, they don’t compare to sinking your teeth into an authentic slice of pizza pie! Other restaurants, like California Pizza Kitchen, also offer a cauliflower crust, but the carb count in their pizza dough can be as high as 30g per serving! Wow.

Ingredients
Crust: For the low-carb crust, this pizza “dough” requires colby jack cheese, cream cheese, eggs, parmesan cheese, and a little heavy cream. We’ll also season it with some dried oregano and garlic powder to give it an authentic Italian taste!
Sauce: Simply use your favorite marinara sauce for this pizza!
Meat: We use crispy bacon and ground bison to top off this pie. If you’re not a fan of bison or can’t get it at the grocery store, lean ground beef or ground turkey would also work.
Cheese: In addition to the cheese we used in the crust, we’ll top this meaty pizza with shredded mozzarella. Yum! I recommend shredding the cheese yourself for melty perfection.
How to Make Low Carb Bacon & Bison Pizza
STEP ONE: Preheat the oven to 375 degrees F and spray a round pan with non-stick cooking spray – like a pie plate or quiche dish. Set that aside for now. In a medium-sized mixing bowl, beat together the softened cream cheese and eggs until they’re nice and smooth. Add the heavy cream, parmesan, and spices to the bowl and mix to combine.
STEP TWO: Sprinkle the colby cheese over the bottom of the pan. Pour the egg mixture over the cheddar/Jack cheese in the pan.
STEP THREE: Bake the crust for 15 minutes. Then, take it out of the oven and let it rest for 5 minutes.
STEP FOUR: While the crust cools, cook the bacon in a large skillet over medium heat for 5 minutes. Then add the ground bison and cook for another 5 minutes, breaking up the bison, until it’s cooked through. Transfer the meats to a paper towel-lined plate to drain any remaining bacon grease.
STEP FIVE: Top the crust evenly with the marinara sauce, mozzarella, and meats.
STEP SIX: Return the pizza to the oven and bake another 15 minutes or until the cheese gets bubbly. Remove the dish from the oven and let the pizza sit for 10 minutes before cutting into 6 slices and serving.
Tips for Success
- Let the pizza cool for about 10 minutes once it’s out of the oven. If you cut it while it’s still piping hot, the pizza slices will be mushy and a big old mess.
- Make sure you grease your pan with cooking spray before laying down the crust layers. Nothing sticks quite like cheese & eggs, so let’s prevent that up front!
- Feel free to add or substitute toppings on your pizza! Pepperoni, sausage, mushroom, jalapeno, spinach, basil, feta, etc. are all low-carb options and keto legal!
Is Gluten-Free Pizza Low in Carbs?
The answer is a huge NO. Most gluten-free pizza crusts, whether from the grocery store or takeout places like Domino’s or Little Caesar’s, are loaded with carbs. Usually between 30g & 40g per serving!
Are Bison Burgers Better for You than Ground Beef?
Generally, yes! Ground bison meat is leaner than beef. It has fewer calories and less saturated fat. Bison is also milder in flavor than many non-traditional meats. Venison, for example, can have a very “gamey” taste.

Ingredients
- 2 ounces cream cheese softened
- 3 eggs
- ¼ cup heavy cream
- ¼ cup Parmesan cheese
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- 1 cup colby jack cheese blend shredded
- 4 strips bacon cut into small pieces
- 6 ounces ground bison (see note)
- ½ cup marinara sauce
- 1 ½ cups mozzarella cheese shredded
- Fresh parsley chopped, for garnish
Instructions
- Preheat your oven to 375 degrees F. Coat the inside of a circular pan (like a pie plate or quiche dish) with non-stick cooking spray. Set aside.
- Beat the cream cheese and eggs together in a medium mixing bowl until smooth.
- Add the heavy cream, parmesan cheese, oregano, and garlic powder. Mix to combine.
- Sprinkle the shredded colby jack cheese evenly over the bottom of the dish. Pour the egg mixture over the cheese.
- Bake for 15 minutes. Remove from the oven and let stand for 5 minutes.
- While the crust sets up, place a large skillet over medium heat. Cook the bacon for 5 minutes. Add the ground bison to the bacon and cook for another 5 minutes, breaking up the meat as it cooks, until browned. Transfer to a paper towel-lined plate to drain.
- Spread the marinara sauce over the crust. Top evenly with mozzarella cheese and then the cooked bison and bacon.
- Bake for another 15 minutes until the cheese is bubbly and the edges are browned.
- Remove from the oven and let cool for at least 10 minutes before cutting into 6 slices (If you cut the pizza while it's still too hot, you will have a mushy and messy pizza.)
