Ingredients
Cookie, Dry Base: The chocolate cookie part of this s’mores is pretty straightforward: Sugar, brown sugar, flour, baking powder, salt, and cocoa.
Cookie, Wet Base: Eggs, butter, and vanilla extract make these cookies SO moist and chewy!
S’mores: These cookies are enormous thanks to the s’mores trio of mini marshmallows, chocolate chips, and graham cracker cereal!
How to Make S’mores Cookies
STEP ONE: Preheat the oven to 350 F and line a baking sheet with parchment paper. In a large bowl, combine softened butter, sugar and brown sugar and beat until creamy. Add the eggs, one at a time, then the vanilla, mixing well.
STEP TWO: In a small bowl, whisk together the flour, cocoa, baking powder, and salt, then slowly add the dry mix to the creamy ingredients in the large bowl and stir gently.
STEP THREE: When thoroughly combined, add the marshmallows, chocolate chips, and graham cracker cereal and gently mix.
STEP FOUR: Form the cookie batter into 1/4 cup-size balls, place 3 inches apart on the parchment paper and gently flatten each cookie.
STEP FIVE: Bake for 15 minutes or until set. Remove from oven and allow to cool for 5 minutes before removing them from the pan to a cooling rack. Now, take a bite and appreciate how wonderful these cookies are!
Tips for Success
- Using Hershey’s milk chocolate chips will give you the most authentic s’mores flavor!
- Don’t be tempted to skip the parchment paper – it makes all the difference in marshmallow cleanup!
- These cookies are huge! Make sure you let them cool after removing them from the oven so they firm up completely.
How Do You Make S’mores in the Oven?
Campfire S’mores are easy to make at home. Line a baking pan with parchment paper and turn on the oven broiler. Lay down squares of graham crackers, add a rectangle from a chocolate bar, then top each one with a large marshmallow. Run under the broiler for 2-3 minutes, remove, and add another graham cracker on top of each marshmallow! Or, you can easily make these Air Fryer S’mores in a flash!
What are Marshmallows Made of?
You may be surprised to learn that not all marshmallows are vegan-friendly! That’s because, in addition to sugar, corn syrup, water, and vanilla, most contain gelatin (which is pork-based). But keep an eye out – there are also vegan-friendly marshmallows out there!
