In my book, nothing is better than a hot, handheld, high-protein breakfast when I head out the door on a cold morning! These Starbucks Copycat Egg White Bites are a perfect example!
These Egg Bites only take a couple of minutes to blend and are super easy to store after they’ve baked! They are ideal for your weekly meal prep! Make up a dozen (or two) over the weekend and keep (well-sealed) for up to five days in the fridge. Pop them in the microwave for 30 seconds, and a nutritious, grab-and-go breakfast is literally at your fingertips!

Eggs: To make a dozen egg white bites, you’ll need 1 1/3 cups of egg whites – this is about a dozen, maybe 13, separated eggs.
Veggies: Egg bites contain nutritious ingredients like red pepper and spinach.
Dairy: Monterey Jack cheese adds tons of flavor, and the secret ingredient—cottage cheese—gives these bites their creamy, custard texture!
How to Make Starbucks Egg White Bites
STEP ONE: Preheat the oven to 300 degrees F and set the rack in the center. Put silicone liners in a muffin tin pan. Alternatively, use paper lines and spray them generously with cooking spray. Set the pan aside for now. Add the egg whites, cottage cheese, and Monterey Jack to the blender, cover, and blend for 30 seconds.
STEP TWO: Add the roasted red pepper and spinach to the blender. Put the lid back on and pulse for 4-5 seconds to mix.
STEP THREE: Pour the egg white mixture into the muffin tin liners and bake for 25-27 minutes until the centers of the egg bites aren’t jiggly and the top is lightly golden.
STEP FOUR: Remove the muffin tin from the oven and set it on a wire rack. Let the egg bites cool for 5 minutes. Then, remove the egg white bites from the liners and eat warm or cool completely. Store any leftovers in an airtight container in the refrigerator.
Tips for Success
- Use 4% or higher cottage cheese for the creamiest texture.
- The blender will help provide that custardy result crucial for these quiche-like egg bites.
- Don’t overfill the muffin cups – ¾ full is just right.
- If you make egg bites often, it’s worth buying silicone liners for the muffin tin – the egg bites virtually slide out and make clean-up a breeze!
- Substitutions and add-ins like Colby Jack or cheddar cheese, green onion and diced jalapeno are all fantastic!
- Try adding a drizzle of your favorite hot sauce to amp up the taste!
What Does Sous Vide Mean?
“Sous Vide” is a French method of cooking in which food is vacuum-sealed and then cooked in a temperature-controlled water bath. This can be done on a stovetop or in a sous vide machine. Starbucks sous vide egg bites are manufactured using this method, but our copycat recipe uses a secret ingredient to achieve the same results without the complex cooking technique!
How Many Eggs Are in a Cup of Egg Whites?
Of course, this will depend on the size of the eggs used. For large eggs, it will take about 10 egg whites to make a cup (as opposed to 6 whole large eggs in a cup). For this recipe, you’ll need about a dozen eggs (maybe 13) to make 12 egg bites.

Ingredients
- 1 ⅓ cups egg whites (see note)
- ⅔ cup cottage cheese
- ½ cup Monterey jack cheese shredded
- 1 roasted red pepper roughly chopped
- ¼ cup spinach roughly chopped
Instructions
- Preheat the oven to 300 degrees F, and arrange an oven rack in the center position. Place silicone liners into a muffin pan (or generously grease paper liners) and set aside.
- Add the egg whites, cottage cheese, and Monterey jack cheese into a blender. Cover and blend for 20-30 seconds.
- Add the roasted red pepper and spinach to the blender. Cover and pulse 4-5 times.
- Pour the egg white mixture into the prepared muffin liners. Bake for about 26 minutes or until the egg whites are set.
- Remove from the oven and cool in the pan on a wire rack for about 5 minutes. Then remove the egg white bites from the liners and cool them to room temperature or enjoy warm.
Notes
- You can use paper liners instead of silicone liners. Just be sure to grease paper liners generously with non-stick cooking spray.
- For the egg whites, you’ll need about 11 eggs to equal 1 ⅓ cups. Or you can use liquid egg whites in a carton (like Egg Beaters or Bob Evans brand), which is the more budget-friendly option, especially if you’re making a big batch for a crowd.
