How to Make Peanut Butter Chocolate Chip Banana Bread
STEP ONE: Preheat the oven to 350 degrees F and grease a 4×8 loaf pan with non-stick spray. Stir the mashed banana and melted butter together in a large bowl. Then, mix in the egg, sugar, and vanilla extract.
STEP TWO: In a medium mixing bowl, stir the flour, baking soda, and salt. Pour the dry ingredients into the wet ingredients and mix until just combined.
STEP THREE: Fold the peanut butter and chocolate chips into the batter using a rubber spatula.
STEP FOUR: Transfer the batter to the prepared loaf pan and top with more peanut butter and chocolate chips, if desired. Bake for 50-70 minutes or until a tester comes out clean.
STEP FIVE: Remove the banana bread from the oven and allow it to cool for 5 minutes in the pan before removing it to a cutting board. Cool completely or cut into slices and enjoy warm!
Tips for Success
- Hang on to those bananas that may be brown and spotty and you don’t want to eat anymore—they’re exactly what you need for this recipe! Peel the banana(s), place them in a ziplock bag, and freeze them for up to three months if you’re not ready to bake banana bread yet.
- To speed up the time it takes for bananas to ripen, place them in a paper bag in a sunny location and check on them once a day. This method typically ripens bananas in a day or two.
- Store the banana bread in a container or ziplock bag on the counter for up to five days. You can also wrap a fully cooled loaf or slices of banana bread in a few layers of plastic wrap and freeze for up to three months.
Can I use frozen bananas?
I love tossing chunks of bananas into a ziplock bag and freezing them for later. Frozen bananas are perfect for smoothies, ice cream, and banana bread! I might only freeze a banana here and a banana there, but after a while, I have enough to make a delicious loaf of banana bread. Set the frozen bananas out to thaw, and once they are soft enough to mash—they can still be cold—they are ready to add to this recipe to make your bread.
What is the number one mistake when making banana bread?
A common problem when making any bread, quick bread or not, is not measuring the flour correctly. Weighing flour is the most precise method of measuring flour, but we may not have access to a kitchen scale. The second-best way to measure flour is to spoon the flour into a measuring cup, rather than using a measuring cup to scoop the flour from a container. Spooning the flour into the measuring cup ensures that too much flour isn’t packed into the cup. A close runner-up to adding too much flour is overmixing the batter. Stir the ingredients until just combined so that your bread turns out light and delicious.
