How to Make Parmesan Roasted Broccoli
STEP ONE: Preheat the oven to 425 degrees F. On a large sheet pan, stir the broccoli, salt, pepper, olive oil, and garlic.
STEP TWO: Roast the broccoli in the oven for 15 minutes. After 15 minutes, sprinkle the parmesan cheese over the broccoli and roast for another 5 minutes or until the cheese is melted.
STEP THREE: When the cheese has melted and is golden, remove the broccoli from the oven and serve immediately.

- Chop fresh broccoli yourself or pick up pre-chopped broccoli florets for this dish. Both are great and using pre-chopped broccoli can be the time saver you’re looking for!
- Grate your own or purchase shredded parmesan cheese for this dish. And don’t forget to give everyone some of that great extra crispy cheese that browned on the pan!
- The water released from frozen broccoli during cooking would prevent the broccoli from properly roasting, so frozen broccoli is not recommended for this dish.
How do you stop broccoli from burning when roasting it?
Broccoli has a different flavor when it’s roasted, a caramelized and rich flavor you won’t get from steaming it, but it can also taste a bit acrid and less delicious if it burns! To prevent the broccoli from burning, it must be mixed with olive oil, as the fat in the oil will give the broccoli a little flavor while protecting it from the high heat. If you notice some pieces of broccoli becoming more toasted than others, those can be removed from the pan early and kept warm in the microwave until the entire dish is roasted.
Why is my roasted broccoli mushy?
You can do a couple of things to prevent an excellent pan of roasted broccoli from getting mushy. First, don’t saturate the broccoli with olive oil. While you need enough oil to keep the broccoli from burning, you don’t want to overcoat the broccoli and create a barrier too thick for the heat to penetrate and roast the broccoli. Secondly, don’t crowd the pan. If too much broccoli is crowded onto a sheet pan, there isn’t enough room for the moisture to escape, which creates soft or mushy broccoli. A little oil and a nice space will make perfectly roasted broccoli!

- 2 heads broccoli cut into florets
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup Parmesan cheese shredded
Instructions
- Preheat your oven to 425 degrees F.
- Toss the broccoli, garlic, olive oil, salt, and pepper together on a baking sheet. Then, spread into a single layer.
- Roast in the oven for 15 minutes
- Top with an even layer of Parmesan cheese and place back in the oven. Roast for 5 more minutes or until cheese is melted and golden.
