Trade in the green beer this year for a KIWI CRUSHER. A light, and refreshing St. Patrick’s Day cocktail!
I think of whiskey and beer when I think of St. Patrick’s Day, both of which are not my favorite drinks! They are way too heavy and leave me feeling miserable the next day! This year I was determined to find a fun and festive cocktail that won’t weigh me down and I think I found it with this Kiwi Crusher. Muddled kiwi, vodka, and a sprig of mint for the luck of the Irish! Plus, look at that vibrant green color. It just screams Happy St. Patrick’s Day!

We had fun muddling this mix together! After a few attempts, we got it just right! (Don’t worry, no booze was wasted in the testing!) Â Tart kiwis are sweetened with agave and fresh mint adds just the perfect amount of flavor making for one refreshing and lively libation! This cocktail is a far cry from your traditional Irish whiskey drinks commonly associated with St. Patrick’s Day. I guess you can call it a spin on a mojito, minus the lime. Agave was used instead of simple syrup to give this drink more dimension. However, if your kitchen isn’t stocked with agave don’t fret! Just use plain old sugar and adjust to your desired sweetness.
Of course, the nutritionist in me needs to mention that this drink is bursting with vitamin C! Ok, I know it’s a bit of a stretch to talk about the health aspects of a cocktail, but at least there will be one serving of fruit consumed this St. Patrick’s Day!
Ingredients
- 1 kiwi peeled
- 4-5 sprigs of mint
- 2 teaspoons agave or simple syrup
- 2 ounces vodka
Instructions
- Muddle together kiwi, mint and agave until a pulp is formed.
- Add ice and vodka, shake until well combined and chilled.
- Pour into a large rocks glass and enjoy!
