Veggies: Since these are fajita shish kabobs, you’ll need red, yellow, and green bell peppers and red onion. You could also add mushrooms, jalapenos, or poblano peppers.
Seasoning: Bring in the Mexican flavors here: chili powder, garlic powder, cumin and salt.
How to Make Grilled Chicken Fajita Skewers
STEP ONE: Combine the seasonings – cumin, garlic powder, chili powder, and 1/2 tsp salt in a large bowl.
STEP TWO: Toss in the uncooked chicken cubes and coat them completely.
STEP THREE: Add the chicken and veggies to the skewers, alternating ingredients so each skewer has a variety of colors and flavors. Sprinkle a dash more salt over the skewers.
STEP FOUR: Grill the skewers on each side for 4-5 minutes over medium-high heat until the chicken is thoroughly cooked.
STEP FIVE: Serve with tortillas, Mexican rice, and all your favorite fajita toppings!
Tips for Success
- Metal skewers work best, but if you want to use wooden shish kabob sticks, soak them in cold water for half an hour before adding your meat and veggies. This prevents them from burning on the grill.
- If time allows, season the meat, cover it, and refrigerate it for an hour before threading it onto the skewers.
- Chicken thighs can work (they taste great!), but be aware they are more prone to fall off the skewers.

- 1 pound boneless skinless chicken breast cut into 1-inch cubes
- 3 tablespoons chili powder
- 2 tablespoons ground cumin
- ½ tablespoon garlic powder
- ½ teaspoon salt plus more to taste
- 1 green bell pepper cored and cut into 1-inch pieces
- 1 red bell pepper cored and cut into 1-inch pieces
- 1 yellow bell pepper cored and cut into 1-inch pieces
- 1 red onion peeled and cut into 1-inch pieces
Instructions
- In a large mixing bowl, mix together the chili powder, garlic powder, cumin, and salt.
- Add the cubed chicken to the spice mix and toss until well-coated.
- Assemble the skewers by alternating between chicken, peppers, and onions until each skewer is filled. Sprinkle a little more salt over skewers.
