Ingredients

pound
boneless skinless chicken breast
cut into 1-inch cubes

tablespoons
chili powder

tablespoons
ground cumin

tablespoon
garlic powder

salt
plus more to taste

green bell pepper
cored and cut into 1-inch pieces
1
red bell pepper
cored and cut into 1-inch pieces
1
yellow bell pepper
cored and cut into 1-inch pieces
1
red onion
peeled and cut into 1-inch pieces
Instructions
In a large mixing bowl, mix together the chili powder, garlic powder, cumin, and salt.
Add the cubed chicken to the spice mix and toss until well-coated.
Assemble the skewers by alternating between chicken, peppers, and onions until each skewer is filled. Sprinkle a little more salt over skewers.
Grill the skewers over medium-high heat for 4-5 minutes per side or until the chicken is cooked through (165 degrees F internal temperature).
Remove from the grill and serve with Mexican rice, tortillas, sour cream, salsa, guacamole, and anything else you like on your fajitas!
Notes
You can also use a grill pan instead if the weather isn't great for grilling.
