Breakfast is known as the most important meal of the day. I know that there is a lot of truth to that, but it does not change the fact that oftentimes breakfast does not always come easy. I cannot help but always remember the stereotypical breakfast scene from old television shows where the family descends the stairs at 7 in the morning, perfectly put together, only to step into the dining room and find Mom smiling and placing the final plate of hot, fresh breakfast biscuits on the table to complete the fully prepared meal that is ready and waiting. In this magical realm, the table was set, all the dishes were still steamingly fresh, Mom’s makeup was flawless, and all the kids said “please” and “thank you” as the family discussed the day ahead of them. Not that I think this level of perfection cannot be achieved with lots of rest and perfect planning, but it is certainly not my daily reality.
More mornings than not I get out of bed only because I know that there is a fresh cup of Folgers Coffee waiting for me downstairs. For those days when I know I am going to need just a little head start on the day, I rely on this amazing breakfast cookie recipe. Ingredients
- 1 ½ cups rolled oats
- 1 ½ cups protein granola (or your granola of choice)
- ¼ cup dried cranberries
- ¼ cup raisins
- ¼ cup dried blueberries
- ¼ cup salted papitas (or sunflower seeds)
- ½ cup cacao chocolate chips (or semi-sweet chocolate chips)
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 2 ripe bananas mashed
- ½ cup peanut butter
- ¼ cup honey
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees and line a rimmed baking sheet with parchment paper.
- In a large bowl combine all ingredients through salt and set aside. In a medium bowl add remaining ingredients and mix. Add the wet ingredients to the dry ingredients and mix to combine.
- Using a cookie scoop or your hands form dough into balls and place on prepared baking sheet. Flatten cookies as desired (cookies will not spread when baking).
- Bake for 17 minutes. Let cool for 5 minutes on baking sheet then transfer to a wire rack to cool completely. Serve immediately or store in an airtight container.
