Granola Breakfast Cookies are the perfect stand-in for the most important meal of the day. Whether you are grabbing one on-the-go or sitting down to a cup of your favorite Folgers Coffee, these healthy breakfast cookies will never disappoint!
I know I am not the only one who struggles when it comes to breakfast. There are those mornings where I simply do not have enough time to cook a well-balanced breakfast casserole because I gave in to the snooze button one, two, three too many times. There are the mornings when I give in to the kids and serve a stack of hot and delicious, but not always nutritious, pancakes. Then there are the mornings where I just want to grab a quick bite, sit down with my favorite cup of Folgers Coffee, and take it easy with a book or just sit outside and enjoy the fresh air. These healthy breakfast cookies check all the boxes! They are easy to make, they are delicious, healthy, and filling, and best of all they pair perfectly with the bold, smooth flavors of my go-to Folgers Coffeehouse Blend.

Breakfast is known as the most important meal of the day. I know that there is a lot of truth to that, but it does not change the fact that oftentimes breakfast does not always come easy. I cannot help but always remember the stereotypical breakfast scene from old television shows where the family descends the stairs at 7 in the morning, perfectly put together, only to step into the dining room and find Mom smiling and placing the final plate of hot, fresh breakfast biscuits on the table to complete the fully prepared meal that is ready and waiting. In this magical realm, the table was set, all the dishes were still steamingly fresh, Mom’s makeup was flawless, and all the kids said “please” and “thank you” as the family discussed the day ahead of them. Not that I think this level of perfection cannot be achieved with lots of rest and perfect planning, but it is certainly not my daily reality.
More mornings than not I get out of bed only because I know that there is a fresh cup of Folgers Coffee waiting for me downstairs. Only when I have the perfect cup of hot coffee in my hand can I even start to think about breakfast. For those days when I know I am going to need just a little head start on the day, I rely on this amazing breakfast cookie recipe. It is truly the perfect pairing to whichever of the 17 unique Folgers coffee options my morning is calling for. From decaffeinated blends to light, medium, and dark roasts there is truly a flavor for every coffee lover! Most mornings you can find me sipping on the medium-dark Colombian or Coffeehouse blend. For me, these varieties provide the perfect balance to my cup because I do not lose the rich coffee taste when I add in my cream and sweetener. If I know my husband and I have time to sit down for a moment together in the morning, I will brew a pot of Folgers Coffeehouse Blend Coffee so we can sit down and imagine we relaxing at a cute little coffee shop in our own backyard. It is the perfect moment to reconnect, gameplan our day, and enjoy the simple pleasure of an amazing cup of coffee together– at least until one of us gets called away for one reason or another.
These granola breakfast cookies pack a punch of protein to give you the energy you need to tackle your morning. The thing I love the most about this breakfast cookie recipe is that they are so easy to make! You can have these cookies from mixing bowl to cooling rack in under 30 minutes. I usually make a fresh batch of these while I’m cooking dinner the night before I know it will be a busy morning at my house. Having these breakfast cookies made and ready to grab makes our mornings run a little smoother. With the kids fed, out the door, and on their way to school I grab a cookie or two, my coffee, and go enjoy a nice peaceful moment on my backyard patio. I love my kids, love my husband, love my job – but I also love sitting alone, on my patio, sun shining (hopefully), with the birds chirping and a cup of Folgers coffee in front of me. These moments are so much easier to come by when you aren’t stuck in the kitchen cleaning up and washing dishes in the aftermath of cooking a big breakfast!
The most important meal of the day is not always strictly about what you eat. Breakfast is not just a meal, it is an investment in the rest of your day. It is so important to take the time to set yourself up to have a great day and to remember that each day is different and will present different challenges. I have come to learn though that two things that will always help to guide you down the path of success are a simple and satisfying breakfast and a hot cup of Folgers 100% Colombian Coffee in the morning. Or two. Sometimes three. With so many amazing roasts, blends, and flavors to choose from, Folgers is truly a staple in my morning routine! Which Folgers coffee is your favorite?
