This Lemon Raspberry Spritzer is a light, refreshing summer cocktail!
Every year, we go to the Jersey Shore with friends of ours. This vacation is the highlight of the summer for my son since he essentially gets a week-long sleepover with his best friends.
Truth be told, it’s the highlight of my summer too because I also get a week-long sleepover with my BFF! You’re never too old for sleepovers, right?!
We spend the entire week with our butts in the sand and our toes in the ocean, catching up on each other’s lives and reading all of the latest celebrity gossip (it’s a guilty pleasure).
Each year we have a signature cocktail for the trip. This year, I’m making these Lemon Raspberry Spritzers for us.
It’s so easy to make a big pitcher of them and sip on them all day long. My favorite thing about them is how versatile this recipe is.
You can easily swap the raspberries for any fruit you have on hand — strawberries, blueberries, blackberries. Or, you can all crazy and add a little of each.
This cocktail is a way to relax on a warm summer day.
- 1 750 ml bottle of citrus infused sparkling wine I used Barefoot Sparkling Citrus Fusion
- 1 cup limoncello liquor
- 1 cup fresh lemon juice
- 1 pint fresh raspberries
- In a large pitcher combine the limoncello and lemon juice.
- Stir in the raspberries.
- Add the sparkling wine.
- Serve chilled or over ice.
