Every year, we go to the Jersey Shore with friends of ours. This vacation is the highlight of the summer for my son since he essentially gets a week-long sleepover with his best friends.

Truth be told, it’s the highlight of my summer too because I also get a week-long sleepover with my BFF! You’re never too old for sleepovers, right?!

We spend the entire week with our butts in the sand and our toes in the ocean, catching up on each other’s lives and reading all of the latest celebrity gossip (it’s a guilty pleasure).

Each year, we have a signature cocktail for the trip. This year, I’m making these Lemon Raspberry Spritzers for us.

Cool off with a light and refreshing Lemon Raspberry Spritzer cocktail!

It’s so easy to make a big pitcher of them and easier to sip on them all day long than a Lemon Drop Martini. Although I do love my Lemon Drops! My favorite thing about this raspberry spritz cocktail is how versatile this recipe is.

You can easily swap the raspberries for any fruit you have on hand — strawberries, blueberries, blackberries. Or, you can go crazy and add a little of each.

This cocktail is a way to relax on a warm summer day.

Lemon Raspberry Spritzer

Ingredients
  

  • 1 750 ml bottle of citrus infused sparkling wine I used Barefoot Sparkling Citrus Fusion
  • 1 cup limoncello liquor
  • 1 cup fresh lemon juice
  • 1 pint fresh raspberries

Instructions
 

  • In a large pitcher combine the limoncello and lemon juice.
  • Stir in the raspberries.
  • Add the sparkling wine.
  • Serve chilled or over ice.
