Fruit: You will need fresh strawberries for this dish.
Dairy: For this recipe, pick up sour cream and Mexican crema. Mexican crema can be found in the refrigerated section of most grocery stores. If you can’t find it, see my tips below to make a substitute at home.
Pantry Items: You will also need sweetened condensed milk and vanilla extract.
How to Make Fresas con Crema
STEP ONE: Wash and dry the strawberries. Cut away the green tops and slice the strawberries.
STEP TWO: Whisk the sour cream, Mexican crema, sweetened condensed milk, and vanilla extract in a medium mixing bowl. Taste the mixture, and if you’d like it sweeter, add one tablespoon of sweetened condensed milk at a time until you like it.
STEP THREE: Layer a portion of cream at the bottom of a small cup and then top it with a layer of strawberries. Continue to layer until there are 3-4 layers per cup. You can continue with the layers if you have more cream and strawberries. It’ll depend on the size of the cups/bowls you use. Refrigerate the dessert cups for 30 minutes before serving to let the flavors marry together.
Tips for Success
- If you can’t find Mexican crema, substitute it by stirring one tablespoon of lime or lemon juice and 1 cup of heavy cream. Let that sit in the fridge for 30 to 2 hours before using it in this recipe.
- Feel free to substitute regular sour cream with light sour cream or plain Greek yogurt.
- For a big batch, double or triple the recipe. Chill the crema mixture and then stir in the strawberries. Serve in a large bowl, and use a ladle to spoon the fresas con crema into cups or bowls.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. The cream mixture might separate slightly, but it is still delicious.
Can I only use strawberries in this recipe?
Strawberries are the traditional fruit in this dish, especially in the summer when the berries are at their peak! Frozen and thawed strawberries can also be used in Fresas con Crema, but there are other fruits you could also include. Bananas, mangos, raspberries, peaches, blackberries, and more are all delicious choices for this recipe. And just like with strawberries, don’t be afraid to use frozen and thawed fruit! Frozen fruit was also picked at the peak of its’ freshness and is great for recipes like this.
