Ingredients
Cake Mix: A boxed chocolate cake mix is going to create the foundation for our cookies.
Moist: To turn the boxed mix from a cake batter into a cookie dough, you’ll just need butter and eggs.
Candy: For this recipe, we’re using Reese’s pieces candy – some for the dough and more for decorating the cookie tops.
How to Make Reese’s Pieces Chocolate Cake Mix Cookies
STEP ONE: Line a baking sheet with parchment paper and preheat the oven to 350 degrees F. In a large bowl, combine the cake mix, butter and eggs together until creamy.
STEP TWO: Gently stir in the Reese’s Pieces. Let the misture sit for about 3 minutes to become less like batter and more like dough.
STEP THREE: Scoop the dough into balls, about 3″ apart, onto the baking sheet. Decorate the tops with more candies to make them even prettier! Bake for 8-10 minutes or until the cookies have spread and the centers look firm.
STEP FOUR: Remove from the oven and allow to cool on the baking pan for a few minutes before tranferring to a wire cooling rack. Enjoy, but TRY not to eat them all in one sitting!
Tips for Success
- Cookies always turn out best when the eggs are at room temperature.
- Swap out the chocolate cake mix for a yellow cake mix for a more “vanilla” version.
- Add a spoonful of peanut butter to the batter for more peanutty taste!
- Don’t like peanut butter? Go for M&Ms instead.
- Spread frosting between two cookies to make larger sandwich cookies.
Can I Freeze Cake Mix Cookies?
You bet! Allow the cookies to cool, then place them on a chilled cookie sheet lined with parchment paper. Slide the baking sheet into the freezer for about an hour until the cookies have frozen. Remove and transfer the cookies into a freezer-safe storage container or baggie and return to the freezer for up to 3 months!
How Do I Keep Cake Mix Cookies Soft & Chewy?
These cookies should stay soft and fluffy on their own in an airtight container on the countertop for 3-4 days. However, if you want to ENSURE they keep that wonderfully chewy texture, simply add a slice of bread into the container/cookie jar! The cookies will absorb the moisture from the bread and retain their softness.
