Ingredients

Marshmallows: To make these bars, you will need both mini marshmallows and regular-sized marshmallows. Pop the mini marshmallows in the freezer before starting this recipe, and freeze them to prevent melting when mixed with hot butter.
Peanut Butter Cups: Pick up your favorite brand of mini peanut butter cups for this recipe and cut them into quarters.
Cereal: Grab a box of Golden Grahams or a store brand equivalent to make these bars.
Butter: You will need a few tablespoons of butter for this recipe, so use what you have on hand.
Vanilla Extract: A splash of vanilla extract is needed for this recipe, so be sure to purchase some if you don’t have it already.
How to Make Peanut Butter Cup S’mores Bars
STEP ONE: Melt the butter in a saucepot over medium heat. Once melted, stir in the regular-sized marshmallows until those are melted, too.

STEP TWO: Take the pot off the heat and stir in the vanilla extract and Golden Grahams cereal.

STEP THREE: Once the cereal is coated, fold in the frozen mini marshmallows and peanut butter cups, mixing well.

STEP THREE: Press the s’mores mixture evenly into a 9×13 pan and let it cool. Once the s’mores mixture is firm, cut it into squares and enjoy!

Tips for Success
- Be sure to freeze the mini marshmallows ahead of time. Being able to bite into a marshmallow is one of the best parts about these bars, and you don’t want the mini marshmallows to melt away when mixed with hot butter!
- If you already have jumbo marshmallows on hand, feel free to use those instead of regular-sized marshmallows. It will be easier to stir and melt the jumbo marshmallows if you cut them up ahead of time.
- If you’re worried about the s’mores bars sticking to the pan, then feel free to either spray the pan with non-stick spray or line the pan with parchment paper for easy removal.

Can s’mores bars be made ahead of time?
Peanut butter cup s’mores bars are delicious the day they are made, but are also great when made ahead of time or enjoyed later! Make up a pan of these bars up to two days ahead of time and keep them well wrapped on the counter. You can also store leftovers in an airtight container on the counter for up to three days or in the fridge for up to five days. Some folks enjoy these bars at room temperature or even slightly warmed, so pop your bar in the microwave for just a few seconds to warm it if it was stored in the fridge!

How do I cut the bars without the knife sticking?
With sticky snacks, it can be difficult to make clean cuts, but there are a few tips that can help! First, be sure that the pan of peanut butter cup s’mores is thoroughly cooled and firm. If the mixture is still warm, then the marshmallows are still gooey, and everything will stick to the knife. Room temperature s’mores bar tastes the best, but if you’re in a rush, you can chill the pan in the fridge for a little bit, and then they will for sure be cool enough to cut. Secondly, you can spray your knife with non-stick spray before cutting the bars, and the knife should move cleanly through the pan.

Ingredients
- 3 tablespoons butter
- 12 ounces jet puffed marshmallows (1 bag)
- 1 teaspoon vanilla extract
- 11.7 ounces Golden Grahams cereal (1 box)
- 2 cups mini marshmallows frozen
- 2 cups mini Reese's Peanut Butter Cups unwrapped, cut into quarters & frozen
Instructions
- Place a large pot over medium heat and add the butter. Once melted, pour in the jet puffed marshmallows and stir until melted and smooth.
- Remove from heat. Stir in the vanilla and Golden Grahams until evenly combined. Add the frozen mini marshmallows and peanut butter cup pieces and stir together.
- Transfer the mixture to a 9-inch x 13-inch baking dish and spread into an even layer. (I do this with my hands after spraying them with cooking spray, but be careful! The mixture is quite warm.)
- Set aside to cool for about 1 hour. Cut into 12 squares, serve, and enjoy!

Notes
- Nutritional information will vary based on how big you cut the bars. I usually get 12 or 15 from this recipe.
- Freezing the mini marshmallows and peanut butter cups (after cutting) helps prevent them from melting into the warm cereal mixture when you’re stirring.

I made these for Memorial Day. Other than “oh my gosh are these ever delicious” the only other thing to say is make sure you either have great self control or people at your home when they are done. They are so wonderful it was almost impossible for me to stop eating them so I had some for the party.

Aubrey was kind enough to share Casey’s special desert when we stopped by to see them off on their new adventure in Beaverton. So sad to see them go, but this desert took a tiny bit of the sadness away. It is delicious and addictive so I limited myself to one piece, so good and will be making it during the holidays to put into gift packages. So good!
