My kids are in their second full week of school and we are extremely busy! Between long days at school, homework, gymnastics, and baseball, our days seem never ending and we are constantly on the go. But, I absolutely love it! The kids love school and their sports, so they don’t mind walking in the door, grabbing healthy snacks recipes or eating a quick dinner, changing clothes, and hopping in the car for the next activity! Last week, I made some delicious and healthy (for the most part) Banana & Oat Cookies for the kids to enjoy when they got off the bus! I added some chocolate chips for a little extra sweetness! The kids LOVED them! My days fill up and I don’t have much free time, so these were perfect to make for a tasty, quick, and easy after school snack. I already got a request to make them again this week! Another great thing about them is that you probably already have the ingredients at home. What are your kids favorite after school snacks?

Ingredients
- 2 large old bananas
- 1 cup of quick oats
- optional-chocolate chips coconut, or nuts (I added 1/4 cup chocolate chips)
Instructions
- Preheat oven to 350 degrees
- Mash bananas and oats together until well combined
- Stir in chocolate chips
- Drop dough by spoonfuls on a baking sheet
- Bake for 13-15 minutes
- Enjoy

Your cookies look great! I always make banana bread out of over-ripe bananas (in fact, I just made some the other day!) but I’ve been wanting to try cookies too! These sound so good! 🙂

I can’t believe those easy ingredients (and no flour!) These sound awesome…definitely trying them this week if I can get everyone to stop eating all the bananas. (They don’t last long at our house!)
