This baked French toast casserole is perfect for holiday mornings. It’s a make-ahead breakfast that really impresses guests. There are just so many tasty versions and it’s so simple! Mix, cover, and refrigerate the night before, and just bake the next morning!
French toast is a family favorite, but it’s so hard to make for a crowd. This baked French toast recipe feeds at least 8, and everyone can enjoy a warm, sweet breakfast together.
French Toast Bake Ingredients
CASSEROLE: You only need a few pantry staples and a Christmas favorite for this overnight French toast casserole. It’s as simple as eggs, eggnog, sugar, nutmeg, cinnamon, salt, vanilla, and a loaf of French bread. I prefer full-fat eggnog for this recipe for a richer casserole.
TOPPING: I like to save the brown sugar and cinnamon topping until I’m about to bake. That way it doesn’t dissolve into the custard as the casserole rests. It creates a crunchy top for this decadent sweet breakfast!
BREAD: You can use fresh or slightly stale bread for this breakfast casserole. I like to cut the bread in the morning and leave it on the counter all day. Then I mix everything together before bed. The sturdy exterior helps the bread stand up to the eggy liquid all night.
How to Make Eggnog French Toast Bake
- First, mix the eggs, eggnog, sugar, nutmeg, cinnamon, salt, and vanilla together in a large bowl.
- Once the custard is ready, add in the bread cubes. Give everything a stir for the bread is covered completely in the liquid.
- Next, pour the bread and eggnog custard in a greased baking dish. Then cove the dish and refrigerate overnight, or for at least 8 hours.
- When you wake up in the morning, preheat your oven to 350 degrees F.
- While the oven heats up, sprinkle the cinnamon and brown sugar mixture on top of the casserole.
- Finally, bake uncovered until the eggs have fully set and golden brown. remove the dish from your oven, cut it into slices, and serve warm.
I love this easy Christmas breakfast casserole because it’s simple to whip up before bed. It also makes a really great brinner (breakfast-for-dinner) treat you can make before work!
My family loves putting fresh berries on top of their slice.
I like to sprinkle on a little powdered sugar sometimes too. It looks like snow!
Then it all gets topped with maple syrup. Yum!
What is Eggnog?
This traditional Christmas drink is typically made with milk, cream, sugar, whipped egg whites, egg yolks, and nutmeg.
Many recipes for the drink include rum, brandy, or bourbon. However, this overnight French toast bake is alcohol-free and family-friendly!

Ingredients
- 7 eggs
- 2 cups full-fat eggnog
- ⅓ cup granulated sugar
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 ½ teaspoon vanilla
- 1 loaf French bread cut into 1-inch cubes
Topping
- 3 tablespoons brown sugar
- ½ teaspoon ground cinnamon
Instructions
- in a large bowl whisk together eggs, eggnog, sugar, nutmeg, cinnamon, salt, and vanilla
- Toss in bread cubes and toss to coat bread completely.
- Pour bread and custard into a greased 2.5-quart casserole dish. Spread evenly in the dish. (You could also use a 9-inch x 13-inch baking dish, but the french toast won't be quite as thick.)
- Cover the dish and place it in the fridge overnight, or for eight hours.
- Preheat the oven to 350 degrees F.
- Mix brown sugar and cinnamon in a small bowl.
- Uncover french toast and sprinkle top with an even layer of cinnamon brown sugar.
- Bake for 45 minutes uncovered. Remove from oven and cut into 8 slices. Serve warm.
