If you haven’t hopped on the air fryer train yet, today is your day to climb aboard! I love using my air fryer for all kinds of dishes, but especially for making deliciously crispy side dishes. Air fryer garlic parmesan potatoes are the PERFECT side to fry up. They’re SO flavorful and are as crispy as a deep-fried french fry! I’m frying up a batch tonight to serve right along with my famous pork tenderloin recipe. You should make some too, you won’t be disappointed!

As the age-old saying goes “your dinner is only as strong as your best side dish”…. that’s a saying, right? No? Ok well, it’s a saying in MY mind because I believe it’s true! You can serve up the most delicious grilled steak or perfectly baked chicken, but if it doesn’t come with a perfectly seasoned side dish, it’s ruined. (At least in my opinion it is…).
That’s why I take my side dish game very seriously and believe me when I say, air fryer garlic parmesan potato wedges are PRIME. Like, mouthwatering status. These garlic parmesan potato wedges are crispy on the outside, tender on the inside, and bursting with cheesy garlic flavor.
In our house, we love all types of fried potatoes, especially potato wedges. But, deep frying them has so many issues for me. Well, we’ve solved that problem today! Garlic parmesan potato wedges air fryer style are so simple to make AND they only use a tiny little bit of olive oil to help them reach peak crispiness. Bye-bye greasy pot of oil!

Ingredients
Potatoes – I’ve found that the ultimate potatoes to use for potato wedges are Russet potatoes. They hold up really well in the air fryer and don’t become waxy.
Seasoning – for your air fryer garlic parmesan potato wedges you’ll need some simple seasonings to get that delicious, savory flavor we’re going for. You’ll need some fresh, minced garlic, grated parmesan cheese, salt, and pepper.
Avocado Oil – I’ve been loving using avocado oil lately in so many recipes. It’s got the same great healthy fats as olive oil but has a much higher smoke point, so it works really well with an air fryer. If you don’t have any on hand though, just substitute in olive oil instead!
How to Make Garlic Parmesan Potato Wedges in an Air Fryer
STEP ONE: You’re going to start by prepping your potatoes to be fried. Get a large pot of water boiling and while that’s heating up, cut your potatoes into wedges.
STEP TWO: Just before the water starts to boil, turn the heat off. Plop your cut potato wedges into the hot (but not boiling) water for 10 minutes. This step helps to get the outside of the potato wedges perfectly crispy while the inside cooks to a soft, delicious texture!
STEP THREE: Drain the potatoes and let them dry on a large tray and preheat your air fryer to 360 degrees F. Once the potato wedges are dry (and I mean dry… pat them with a paper towel if you need to), coat them with the oil. Add the garlic, salt, parsley, pepper, and parmesan cheese give them a good toss until they’re all completely coated.
STEP FOUR: It’s time to get air frying! Put the potatoes in an even layer into the air fryer basket. Cook them for 8 minutes. After 8 minutes, give the tray a little shake and raise the temperature to 400 degrees. Cook for 5 more minutes. Shake and check the tray periodically – you don’t want the potato wedges to get stuck to the basket! You’ll know your garlic parmesan potato wedges are done when they’re golden brown and crispy.
Tips for Success
- Want to make this recipe in the ocen? Simply follow all of the same prep instructions, but bake your potato wedges at 375 degrees F for about 25-30 minutes on a baking sheet. You probably won’t achieve the exact same amount of crispiness as you would in an air fryer, but the flavor is all there and it’s amazing.
- I like making these potato wedges with the skin-on. It cuts down on prep time and they’re good for you – with B vitamins, vitamin C, iron, calcium, potassium, and more!
- These potato wedges go great with all your favorite dipping sauces – from ranch dressing to fry sauce. Just choose your favorite and dig in.
- If you want to make regular air fryer potato wedges, just skip the garlic and parmesan when you season the wedges, and don’t put any extra Parmesan on top after cooking. It’s that simple.
Why do you soak potatoes in water before air frying?
It may seem like an unnecessary step, but I ALWAYS suggest soaking potatoes before cooking them. Whether I’m making air fryer garlic parmesan potato wedges, air fryer french fries, or even oven-roasted potatoes, I soak them.
Soaking potatoes before cooking them (baking, deep-frying, or air frying) is what makes them get that extra crispy crust. By allowing potatoes to soak in water, you’re letting the starches release. By having less starch inside the potatoes, they become less soggy and are able to crisp up perfectly.
Do you have to preheat an air fryer?
While they are significantly faster at heating up than a conventional oven, you do still need to give your air fryer a little bit of time to heat up before you’re ready to fry. If you just plop your garlic parmesan potato wedges (or any other food!) into the air fryer without preheating it, you run the risk of your recipe coming out soggy. The whole point is to air fry it to crispy perfection! So, make sure you leave about 10 minutes for your air fryer to reach temperature.

Ingredients
- 4 russet potatoes
- 1 tablespoon olive oil or avocado oil
- ¼ cup Parmesan cheese grated, plus more for topping
- 1 tablespoon garlic minced
- 1 tablespoon fresh parsley finely chopped
- 1 teaspoon salt
- ¼ teaspoon pepper
Instructions
- Place a large pot of water over medium-high heat while you cut the potatoes into wedges lengthwise. Just before the water is boiling, remove it from the heat. Add the potatoes to the hot water and blanch them for 10 minutes.
- Drain the potatoes and place them on paper towels or a kitchen towel to drain. Once thoroughly dried, transfer the potatoes to a baking sheet.
- Preheat the air fryer to 360 degrees F.
- Pour the oil over the potatoes and toss they're coated. Sprinkle with garlic, salt, pepper, and Parmesan. Toss to coat.
- Transfer the potato wedges to the air fryer basket. (Be sure not to overcrowd them. If needed work in batches for smaller air fryers.) Cook for 8 minutes at 360 degrees F.
- Shake the air fryer basket and then cook for 5 minutes at 400 degrees F to really crisp up the potatoes.
- When the cooking time is up the potatoes should be crispy and golden brown. Serve warm with extra Parmesan cheese sprinkled on top alongside your favorite dipping sauce.
