How to make keto fat bombs
- In a large bowl beat butter until light and fluffy, using a hand mixer. Mix in sugar, salt, and vanilla and mix until combined.
- Add in almond flour a little at a time and mix until dough consistency forms. Pour in chocolate chips and mix. Cover with plastic wrap and place in the refrigerator for 10-15 minutes.
- In a microwave-safe dish melt sugar-free chocolate chips in 30-second increments, stirring between each increment until smooth.
- Dip each fat bomb in melted chocolate and place on a rimmed baking sheet lined with parchment paper. Return to freezer for 5 minutes, or until chocolate has hardened.

Tools used to make Chocolate Chip Cookie Fat Bomb
Large Mixing Bowl: This mixing bowl is perfect for mixing and serving. I love how big it is! I can use it for anything and everything.
Hand Mixer: While I love my stand mixer, this handheld mixer is perfect for smaller recipes and when I need just a quick mix.
Baking Sheet: A nice big baking sheet is a must-have for any kitchen. This half pan sheet is large than a regular cookie and works great for anything you’re baking.

Ingredients
- ½ cup butter softened
- ⅓ cup Swerve confectioners sugar (Erythritol sweetener)
- 1 teaspoon pure vanilla extract
- ½ teaspoon kosher salt
- 2 cup almond flour
- 9 ounces dark chocolate chips (I used Lily’s)
- 8 ounces sugar-free chocolate chips (I used Hershey’s)
Instructions
- In a large bowl beat butter until light and fluffy, using a hand mixer. Mix in sugar, salt, and vanilla and mix until combined.
- Add in almond flour a little at a time and mix until dough consistency forms. Pour in dark chocolate chips and mix. Cover with plastic wrap and place in the refrigerator for 10-15 minutes.
- Remove dough from fridge and use a cookie scoop or measuring spoon to form 1-inch balls (about 1 heaping tablespoon). Place on a rimmed baking sheet lined with parchment paper.
- In a microwave-safe dish melt, sugar-free chocolate chips in 30-second increments, stirring between each round of heating until smooth.
- Dip each chilled fat bomb in melted chocolate and then put back onto the lined baking sheet. Place in freezer for 5 minutes, or until chocolate has hardened.

- The carbs listed for each fat bomb is 12 grams. Both the dark chocolate chips and Swerve sweetener contain Erythritol and the sugar-free chocolate chips contain Maltitol. After subtracting these sugar alcohols and dietary fibers, each fat bomb has a net carb amount of 4.1 grams.

Hey Jade, we used almond flour in this recipe. Check your chocolate chips to make sure they don’t have dairy in them if you are sensitive to dairy.

Did your microwaved sugar free chocolate chips get thin enough to dip the balls in?? I couldn’t seem to get it that thin and, instead, had to spoon the chocolate all over the balls which was very messy and time consuming. Any suggestions to simplify this step. Other than that, these are ridiculously good!!

Hey! Here’s what I learned, as I love my fat bombs coated in dark chocolate.
Use a water bath. This is my take on it.. put a Pyrex type glass (I use a glass measuring cup) in a small sauce pan. Put water in the sauce pan. Like an inch or two. Put the chocolate in the glass that’s inside the sauce pan. Add some fat to the chocolate so it thins out (coconut oil, butter, etc) boil the water and the chocolate will melt. (Obviously stir through the process) but this keep the chocolate warm and from burning. Turn the heat off when you’re chocolate is melted but don’t take it out of the hot water!

These aren’t really keto if you add sugar and have 12g carb PER 1fat bomb. Low carb, yes, keto they are not.

Hi Jeffrey! After factoring in the sugar alcohols from the sweetener and both types of chocolate chips, the fat bombs have a net carb amount of 4.1 grams each. Unfortunately, this is not something our nutrition calculator can figure out on its own, but we have made a note of it at the bottom of the recipe card. 🙂

I love hearing people say “that’s low carb but not keto”. You mean keto as in the process of ketosis whereby the body uses fat for fuel instead of sugar? And where the daily carbs to keep someone in ketosis varies per person? So, anything that is low carb enough to keep you in ketosis over the course of a day could be keto then? Or is something keto only if it has zero carbs – because if that’s the case (which it isn’t) then basically no natural foods are keto and no one is on the keto diet.

Maltitol does impact blood sugar, usually just as much as regular sugar. These are most definitely NOT ketogenic friendly unless you got rid of the Hershey sugar free.
