Pancake Sausage Bites are made with savory breakfast sausage fried in sweetened pancake batter and dipped in a buttery, warm syrup sauce. These delicious bite-sized breakfast sausage minis will be a new favorite in your house any time of the day.

It doesn’t need a special occasion in my house to make breakfast for dinner! Pancake Sausage Bites are always a favorite of mine because they combine the best parts of breakfast into one complete meal in just 30 minutes.

INGREDIENTS
Sausage: Start with an 8-count pack of Jimmy Dean fully cooked sausage patties.
Batter: This batter uses Bisquick pancake mix mixed with milk and eggs and sweetened with sugar, cinnamon, and vanilla extract
Maple Dipping Sauce: Mix together maple syrup, butter, and heavy whipping cream to create this perfect maple dipping sauce.
HOW TO MAKE PANCAKE SAUSAGE BITES
STEP ONE: Start by placing the sausage patties into a medium bowl, break them apart and reform the sausage into small balls. Place the sausage balls in a large skillet over medium heat and cook them for about 15 minutes, turning the sausage balls often. Once cooked, remove the sausage to a paper towel-lined plate.
STEP TWO: In a medium bowl, mix together the Bisquick, sugar, and cinnamon. Next, whisk in the vanilla extract, egg, and milk until the batter is smooth.
STEP THREE: Continue heating about 2 inches of oil in a saucepan. Pick up each cooked sausage ball with a toothpick and dip it into the pancake batter, completely covering the sausage. Using the toothpick, carefully lower each Pancake Sausage Bite into the oil. Fry each bite for about 1 to 1 1/2 minutes, or until golden brown, and place them on a paper towel-lined plate to drain.
STEP FOUR: Pour the maple syrup into a microwave-safe bowl and add one tablespoon of butter. Microwave the syrup for about 45 seconds, remove and stir to incorporate the syrup and butter. Finish the sauce by adding the heavy whipping cream and stirring. Then pour over the bites or serve in a bowl for dipping.
TIPS FOR SUCCESS
- If you do not have pre-cooked sausage patties available, you can take raw breakfast sausage patties or sausage from a chub and form them into small balls. Cook as directed on the package until the sausage balls are cooked through.
- You can use original or maple-flavored breakfast sausage. I wouldn’t use hot or sage sausage as the other two pair MUCH better with the pancake batter and dipping sauce.
- If you prefer to use homemade pancake batter, you can absolutely do that. Just add in the amount of cinnamon listed with the dry ingredient and prepare as you usually would.
HOW TO REHEAT PANCAKE SAUSAGE BITES
Any leftover bites can be stored in an airtight container in the fridge for 2-3 days. When you’re ready to reheat, the microwave is the quickest option. You can also opt to use the oven or an air fryer if you prefer a crispier outside. Just check to ensure that the sausage has reached 165 degrees F before eating.
CAN YOU FREEZE PANCAKE DIPPED BREAKFAST SAUSAGE?
I love to make a batch of these breakfast bites to have on hand in the freezer. Once cooked and cooled, place any sausage bites you want to freeze onto a baking sheet. Place the baking sheet into the freezer. Once frozen, place the bites into a freezer bag or ziplock container and store them for up to 2 months.

Pancake Sausage Bites
- 8 Jimmy Dean fully cooked sausage patties (original or maple)
- 1 ½ cups Bisquick
- 1 tablespoon granulated sugar
- ¼ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 1 egg
- 5 ounces milk
- Canola oil for frying
Maple Dipping Sauce
- ½ cup maple syrup
- 1 tablespoon butter
- 2 tablespoons heavy whipping cream
Instructions
Pancake Sausage Bites
- Place about 2-inches of oil in a deep-sided skillet or saucepan and place over medium heat.
- Crumble the sausage patties in a medium bowl. Then use your hands to form the crumbles into 18 small sausage balls.
- Place the sausage balls in a large skillet over medium heat and cook for about 15 minutes, turning often. Remove to a paper towel-lined plate to drain.
- In a medium bowl, mix together the Bisquick, sugar, and cinnamon. Whisk in the vanilla, egg, and milk until smooth.
- Pick up each cooked sausage ball with a toothpick and dip it into the batter so the sausage ball is completely covered.
- Carefully lower the coated sausage balls into the hot oil and fry for about 1- 1 ½ minutes or until golden brown. Remove from the oil and drain on a paper towel-lined plate. Repeat with remaining sausage and batter.
Maple Dipping Sauce
- Pour the maple syrup into a small bowl and add the butter. Microwave for 45 seconds. Remove and stir until the butter has melted into the syrup.
- Pour in the heavy whipping cream and stir until combined.
- Serve the pancake sausage bites warm with the maple sauce poured over the top or in a bowl for dipping.
