A spiral cut ham is a great option for this recipe. This cut is flavorful and easier to carve and serve than on-pre cut options. Plus, the cuts allow the flavor of the glaze to get in between the slices which will give your food the most incredible caramelized fruit taste!
How to Make Glaze for Ham
To make the apricot glaze just whisk together apricot jam and brown mustard. No brown sugar needed here, the jam has the sugar covered.
If your jam has a lot of fruit pieces in it, you might want to consider pressing it through a sieve or giving it a quick whirl in the food processor to make a smoother glaze.
You can also use grainy mustard instead of brown mustard if you prefer a bit more texture.
How to Make Apricot Glazed Spiral Ham
- First, whisk together the apricot glaze ingredients in a bowl and set it aside so that the flavors can really meld together.
- Then, preheat your oven to 350 degrees F. Prepare the ham by placing it in a large baking or roasting pan and covering it with aluminum foil. This will allow the meat to heat evenly without burning the outside.
- Bake the ham (unglazed) for an hour, then remove it from the oven and discard the foil.
- Use a basting brush to spread about 3/4 of the apricot glaze over the outside of the ham.
- Then return it to the oven, increase the temperature to 400 degrees F, and bake uncovered for 20 minutes.
- Remove the ham from the oven, and brush the rest of the glaze all over the outside.
- Return the pan to the oven and bake for 15 more minutes until the surface is browned and the glaze is caramelized. The internal temperature should be 145 degrees F.
- Garnish with chopped parsley if desired, to give it some extra flavor, then serve and enjoy!
When you brush on the glaze, try to get it into the crevices as much as possible for an irresistible flavor!
How Long to Cook a Spiral Ham
Cooking a spiral ham perfectly is a bit of a science. But you can easily calculate how much time you’ll need by figuring out the weight to temperature ratio first.
You’ll want to bake you ham for 6 to 8 minutes per pound. So an 8-pounder like I used for this recipe will bake for around an hour before glazing. If you’re working with a large cut, add more time on the initial bake using the 6 to 8 minute per pound rule.
How to Cook Bone In Ham without Drying it Out
There are a few simple things you can do to ensure that your meat turns out moist and flavorful without drying out.
- Cook it cut side down. This helps the juices to settle properly and preserve moisture.
- Cook at a low temperature. It may seem tempting to cook meat at a higher temp, but roasting at 350 degrees ensures that the meat stays juicy.
- Baste with pan juices. You can pull the meat out halfway through the initial cook time and baste with any pan juices that have rendered. Feel free to baste again just before serving or serve with pan juices spooned over the top. Yum!

Ingredients
- 1 bone in smoked ham preferably spiral cut (7-10 pounds)
- ½ cup apricot jam
- ¼ cup spicy brown mustard
- Fresh parsley chopped, for garnish
Instructions
- Whisk together the jam and brown mustard. If your jam has a lot of large fruit pieces in it, you may want to puree the jam in a food processor or run it through a sieve if you like a smooth glaze. Set the glaze aside.
- Preheat the oven to 350 degrees F.
- Place the ham in a large baking pan and cover with foil. Bake for 1 hour.
- Remove the ham from the oven and uncover it.
- Brush the ham evenly with approximately 3/4 of the glaze. Make sure the glaze goes into all of the crevices between the ham slices.
- Increase the oven temperature to 400 degrees F.
- Bake for an additional 20 minutes, uncovered. Then, brush the remaining glaze over the ham and bake for an additional 15 minutes.
- Remove from oven and garnish with chopped parsley if desired.
