How to Make Silver Dollar Pancakes
STEP ONE: Preheat a skillet on medium-low heat. In a large bowl, whisk flour, sugar, and baking powder together.
STEP TWO: Add the milk, egg, and vanilla extract and mix until combined. Lightly whisk in the butter. Turn the skillet on medium heat and spray with non-stick cooking spray.
STEP THREE: Drop one Tablespoon of batter onto the hot skillet at a time until the skillet is full, but the pancakes are not touching. Once bubbles have formed on the pancakes, flip them and cook for another minute.
STEP FOUR: Serve the pancakes warm with your favorite toppings.
Tips for Success
- Be sure to spray the skillet with more non-stick spray between each batch of pancakes.
- When making regular-sized pancakes, you don’t want to overmix the batter. Stir everything together until just combined for light, fluffy pancakes.
- These tiny cakes take only a minute or two to cook on each side, so keep an eye on them to prevent overcooking or burning the pancakes.
Why are they called Silver Dollar Pancakes?
Silver dollar pancakes were created roughly 100 years ago, based on the original Scottish drop scone recipe. While everyone loves a good pancake, and there are many types worldwide, Silver Dollar pancakes are an American creation named after an American coin. Silver dollars were circulated until 1979 and were about 2-3 inches in diameter, the same as the pancake. Even though silver dollars are harder to find, people’s love for silver dollar pancakes can be found anywhere, as these little fluffy cakes are so fun to eat!
What’s the best way to freeze and reheat pancakes?
Silver dollar pancakes make a great busy breakfast and taste amazing when reheated! Once you’ve finished cooking all the pancakes, you can freeze them in one of two ways. They’ll stay good for up to two months.
- Allow the pancakes to cool completely on the counter, and then stack them with a layer of wax paper between each pancake. Pop these stacks into a freezer ziplock bag and seal well.
- Place the cooked pancakes on a sheet pan and freeze them for 30 minutes before storing them in a freezer bag.
Reheat the frozen pancakes in a medium-hot skillet for 3 minutes, flipping halfway, or in the microwave for 20-30 seconds until warm. If reheating a large batch from frozen, arrange the pancakes on a baking sheet and cover them with foil. Bake the pancakes for 10 minutes at 350 degrees F.
