But not this Homemade Chicken Apple Sausage! It is super easy to make and has less fat. Thanks to the apples, onions, and spices, it’s loaded with fresh, tasty flavor! This recipe is destined to be a new favorite with your family!

Ingredients
Chicken: This recipe uses a pound of ground chicken. You can also grind boneless chicken thighs in a food processor – it’s easy and works great!
Fruits & Veggies: A Gala apple and a yellow onion are the fun flavors in this sausage!
Oil: We use coconut oil to saute the onions. Other oils will work fine, too, but coconut oil has a high heat point and a subtle sweetness.
Seasoning: This recipe uses all the traditional sausage seasonings, such as sage, fennel seeds, smoked paprika, cayenne, and salt and pepper.
How to Make Chicken Apple Sausage
STEP ONE: Heat a tablespoon of coconut oil in a large skillet over medium heat. Add chopped onion and cook for a few minutes until the onions become translucent. Add the peeled, chopped apple and cook for another few minutes. Remove from heat and transfer the onion and apple to a medium bowl. Allow to cook for about 5 minutes.
STEP TWO: Now add the ground chicken and all the seasonings—sage, fennel seed, smoked paprika, cayenne pepper, salt, and black pepper—to the onion and apple and mix well.
STEP THREE: Form the mixture into patties. This will make about eight equally-sized sausage patties.
STEP FOUR: In the same skillet, over medium heat, cook sausage patties for about 3 minutes per side. They should be golden brown on the outside and fully cooked on the inside. It’s best to cook 3 or 4 at a time to ensure even cooking.
STEP FIVE: Once cooked, remove from the skillet and serve warm. SO GOOD!
Tips for Success
- Sausage needs some fat, so dark meat makes a better-finished product. Boneless thighs are ideal if you’re grinding your own.
- A little Cayenne goes a long way! I LOVE a little spicy to counter the sweet and savory sausage, but it’s optional if you don’t want that extra kick.
- Apple peels may contain the most vitamins, but their texture doesn’t work in sausage. Make sure to peel those Galas!
Is Homemade Sausage Worth the Trouble?
You are considering how easy this recipe is! For one thing, the sausage you make yourself will be far less expensive than store-bought brand-name patties. For another, you’re in control of the quality of this homemade sausage. You’re in charge of the salt and fat content. You aren’t adding additives, preservatives, or chemicals to your homemade version.
But the biggest perk to making your sausage is the taste. I can tell you all day long how phenomenal the flavor is, but until you make it yourself, you won’t fully appreciate how fantastic it really is!

Ingredients
- 1 tablespoon coconut oil
- 1 small yellow onion chopped
- 1 medium Gala apple peeled and chopped
- 1 pound ground chicken
- 1 teaspoon ground sage
- 1 teaspoon fennel seeds chopped
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
Instructions
- Heat coconut oil in a large skillet over medium heat.
- Add onion and cook for 1 to 2 minutes, until onions become translucent.
- Add chopped apple and cook for another 2 minutes.
- Remove onion and apple mixture to a medium bowl and allow to cool for 5 minutes.
- Add ground chicken, ground sage, fennel seed, salt, pepper, paprika, and cayenne to the bowl and mix until evenly combined.
- Form ground chicken mixture into 8 equal patties.
- Cook sausage patties over medium heat in the same skillet for about 3 minutes per side. When the patties are done, they will be golden brown on the outside and cooked through on the inside. I usually cook 4 patties at a time, working in batches.
- Remove patties from the skillet and serve warm.
