French toast is one of my breakfast favorites (followed closely by pancakes and waffles… can you tell I love carbs???). Easy Blackberries and Cream Stuffed French Toast is an elevated take on this classic breakfast dish.
It’s crispy, sweet, and bursting with fresh berry flavors. The best part? It is SO simple to make, I would even trust my kids to make it all on their own (my boys know my tried and true french toast methods – check them out here —> How to Make French Toast).

Mother’s Day is fast approaching! Who does the cooking in your family on Mother’s Day? My Dad does the cooking for my Mom and my husband has started cooking for me with the occasional help from my two little monkeys.
It’s so great to get breakfast made for me by the people that love me but they don’t cook a lot, so I like to share easy ideas with them. This year, I am starting to drop hints REALLLLL early haha. I’ve become obsessed with Stuffed French toast, so I’ll be sure to remind my husband and kids that it would be my ideal breakfast-in-bed. Maybe I’ll even just leave the recipe hung on the fridge in plain sight 🙂
This EASY Blackberries and Cream Stuffed French Toast is soooo good. When I make it, I always make extra because I mean to only eat a piece but then I end up going back for another, and another and another. The almond extract gives a little something extra and the warm cream cheese and berry filling is so good. This recipe makes it so easy to take regular French toast up a notch for Mom on her special day!
Ingredients for Blackberries & Cream French Toast
- French bread
- Eggs
- Granulated sugar
- Milk
- Cream
- Vanilla extract
- Almond extract
- Cream cheese
- Fresh blackberries
- Butter or cooking spray
I personally adore blackberries. They’re sweet, ever so slightly tart, and oh-so-juicy. Blackberries are my go-to fruit when making cream cheese stuffed french toast.
But, they’re not always available or super fresh. While most stores carry them year-round, the actual peak season for fresh blackberries is throughout the summer.
If you find your grocery store is lacking in quality blackberries, go ahead and try another berry. I know that blueberries, raspberries, and strawberries also all make for extra delicious homemade french toast! Try out some different combinations and let me know what you think!
How to Make Stuffed French Toast
The reason this is the best french toast recipe is the key step of drying your bread out in the oven before pan-frying it. You want your bread to be stale (quite the opposite of what you’d actually think). This helps to get a nice crispy layer on the outside of your french toast!
- Start by cutting your french bread into 1/2-inch thick slices. Then, place the bread slices on a baking sheet and put into a cold oven.
- Heat the oven to 350 degrees F. This will dry out the bread, making it perfect for French Toast!
- In a large bowl, beat together the eggs, 1/4 cup of sugar, milk, cream, vanilla extract, and almond extract
- Once the oven reaches 350 degrees F, check the bread for staleness and remove if it seems dried out. If not, leave it in for a few more minutes (don’t forget about it though!)
- In a small bowl, mash the berries with 1 tsp of sugar. If you want to get crazy, you can add a little lemon zest in with the blackberries. It’s really good!
- Next, spread a (generous) layer of cream cheese on one side of half of the slices – you’ll want just as many cream cheese’d slices as plain slices.
- Next, heat a large skillet over medium-low heat and grease with cooking spray or butter.
- Now, dip a piece of bread with the cream cheese and a piece without cream cheese into the egg mixture
- Place the slice with cream cheese into the pan first, cream cheese side up. Spoon 2 teaspoons of the mashed berries onto the cream cheese and spread evenly. Top with the next slice of bread.
- Cook until golden brown on both sides and keep cooked toast warm in the oven (nobody wants lukewarm stuffed french toast).
- Continue steps 6-10 with the remaining bread slices
- Place a slice (or two or three…) of stuffed french toast on a plate and garnish with fresh blackberries for a beautiful breakfast for someone you love!
I may even put a little whipped cream or powdered sugar on top sometimes too! You can absolutely eat this breakfast as is, but I’m a purest and maple syrup always finds it’s way onto my french toast.
The great thing about this recipe is that if blackberries aren’t your thing, you can easily swap out for your favorite berry. I’ve made strawberries and cream cheese french toast for my family too using this recipe!
What is the Best Bread for French Toast?
While yes, you can absolutely use the leftover sandwich bread from last week to make yummy french toast, I’ve found that it doesn’t crisp up quite as nicely as some other bread options. If it’s what you’ve got on hand though, go for it!
In my humble opinion, the best type of bread for homemade french toast is french bread (funny…french bread works for french toast, who knew?). It is sturdy, has a delicious crust, and it soaks up your egg mixture perfectly.
Other contenders for quality cream cheese stuffed french toast include brioche and challah. I find these a little more difficult to find on a regular basis than french bread, but they are equally as sturdy and just as yummy!

Ingredients
- 1 loaf French bread cut into 1/2 inch slices
- 5 eggs
- ¼ cup granulated sugar
- ¾ cup milk
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
Filling
- 4 ounces cream cheese softened
- 1 teaspoon granulated sugar
- 1 cup fresh blackberries
- Butter or cooking spray for the pan
Instructions
- Place the bread slices on a baking sheet and put into the cold oven.
- Heat the oven to 350 degrees F. This will dry out the bread, making it perfect for French toast!
- In a large bowl beat together the eggs, 1/4 cup sugar, milk, cream, vanilla extract, and almond extract. Set aside.
- Once the oven reaches 350 degrees F check the bread to ensure it's dried out, and then remove from oven. Turn the oven to WARM, or 200 degrees F.
- Take half of the bread slices, and spread a layer of cream cheese on one side. Leave the remaining slices plain.
- In a small bowl, mash the berries with 1 teaspoon of sugar.
- Place a large skillet over medium-low heat and grease with cooking spray or butter.
- Dip a piece of bread with cream cheese and a piece without cream cheese into the egg mixture. Place the slice with cream cheese into the pan first, cream cheese side up.
- Spoon 2 teaspoons of the mashed berries onto the cream cheese and spread evenly. Top with the other slice of bread.
- Cook until golden brown on both sides. Transfer the cooked french toast back to the baking sheet and keep warm in the oven. Continue with the remaining bread slices and blackberries.
- Once all the french toast is cooked, remove the baking sheet from the oven and serve warm. Sometimes I top our french toast with a little whipped cream and a fresh blackberry.
