Ingredients
Refrigerated Items: The casserole starts with a can of refrigerated biscuits (use any brand you like, but don’t grab the big Grands! type). This rich, yummy breakfast casserole needs Colby jack cheese and whole or 2% milk. Combining shredded cheddar and mozzarella is another yummy option for the cheese blend. Eggs are what pull this casserole together, plus they add a ton of filling and healthy protein!
Meat: Crumbled breakfast (pork) sausage works best and adds tons of savory flavor! Depending on your preference, you can use regular, sage, or hot flavors. If you buy breakfast sausage links, remove the casing before cooking them.
Gravy: This recipe calls for a package of gravy mix to save time and energy. However, you can absolutely make your own country gravy from scratch.
Seasoning: Garlic powder and black pepper add just the right flavor to this casserole!
How to Make Biscuits & Gravy Casserole
STEP ONE: Preheat the oven to 350 degrees F and lightly spray a 9×13 pan with non-stick cooking spray. Cut each canned biscuit into quarters and place these bite-sized pieces on the bottom of your dish. Set aside.
STEP TWO: Brown the sausage in a skillet over medium heat until cooked all the way through. Drain the grease and sprinkle the cooked sausage over the biscuits. Add half the cheese over the sausage.
STEP THREE: Whisk eggs, milk, garlic powder, and pepper together in a medium mixing bowl. Then, pour this mixture over the cheese and sausage. Sprinkle the remaining cheese all over the top.
STEP FOUR: Make the gravy according to the package directions, and then pour it evenly over the casserole. Bake uncovered for 35 minutes. When the casserole is ready, the sides will be bubbly and golden brown, and the eggs will be fully cooked.
STEP FIVE: Allow to cool for 5 minutes before serving. Enjoy the breakfasty goodness!
Tips for Success
- The sausage and cheese already contain salt, so save the extra shake of salt for the table if needed.
- You can use low-fat or skim milk for this recipe, but it won’t be as rich and creamy.
- A sage sprinkle and maple syrup splash elevate this casserole for special occasions.
- Red pepper flakes and a dash of hot sauce will give it a nice kick!
- Instead of using a packet mix, you can make your homemade gravy if you prefer.
Can I Make a Biscuit Casserole Ahead of Time?
Yes, but because of the raw eggs, probably just the night before (12 hours or so). Follow the instructions as is, but don’t completely assemble. Cover the biscuit & cheese layers with plastic wrap. Make the egg batter and store it in a sealed container. Make the gravy, allow it to cool, and seal it in a 3rd container. Keep all three in the fridge overnight. In the morning, pour the egg mixture over the biscuits, add more cheese, top with the gravy, and bake as directed! SO GOOD!
How Do You Make Southern Gravy from Scratch?
Gravy is easy and has only three ingredients – so don’t be intimidated!
You’ll need milk, butter, and flour (and, of course, salt and pepper). In a saucepan (or black skillet), melt a half stick of butter over low heat. When it starts to get creamy, slowly stir in 4 Tbsp flour until smooth and creamy, and continue cooking on low for a minute or two.
Slowly add 2 cups of milk and turn the heat up to medium-high, stirring continuously. When it reaches a boil, cook for another minute, then remove from the heat. Season with salt and pepper to taste, and you’re done! (Alternative: You can fry sausage or bacon first. Remove the meat from the pan and use the drippings instead of the butter to make gravy. In the final step, crumble the sausage or bacon and add it back into the gravy. Amazing!)
