Ingredients
Crust: Canned refrigerator biscuits make the airy, soft, pillowy “crust” for this pizza casserole.
Sauce: You’ll need a jar of your favorite store-bought or homemade pizza sauce to meld all the flavors together!
Protein: For the Supreme Pizza theme, we use crumbled Italian sausage and slices of pepperoni. Yum!
Cheese: You just can’t bean classic Mozarella for authentic pizza flavor (and a great cheese pull!)
Toppings: For this pizza bake, we’re using chopped green pepper, onion, mushrooms, and black olives – but feel free to use whatever toppings make you happy!
How to Make Supreme Pizza Bubble Up
STEP ONE: Preheat the oven to 350 degrees F. Separate the canned biscuits and cut each one into quarters. Spray a 9×13 baking dish with cooking spray and lay the biscuit quarters into the pan.
STEP TWO: Spread the pizza sauce over the top of the biscuit dough and top with 1 1/2 cups of the grated mozzarella. Add the toppings evenly across the cheese – cooked, crumbled Italian sausage, slices of pepperoni, and all the chopped veggies like bell pepper, onion, black olives, and mushrooms. Sprinkle the rest of the cheese over the top.
STEP THREE: Bake for 25-30 minutes until the biscuits are no longer doughy and the cheesy is gooey and melted. Let stand for 5 minutes before cutting. Serve with a sprinkle of parmesan or oregano if desired, and enjoy!
Tips for Success
- Fresh mushrooms have a better texture when baked than canned mushrooms, but either will work in this recipe.
- Microwaving the pepperoni slices on a paper towel for a few seconds will remove much of their grease (and more than a few calories!)
- Don’t be skimpy with the sauce – the “bubble” biscuit dough will soak it up.
- Toss in a little provolone or parmesan with the mozzarella for more flavor depth.
- For a fun twist, try a different sauce like alfredo or pesto!
- Elevate the biscuit dough crust by brushing it with a little garlic butter and a sprinkle of Italian seasoning before layering in the ingredients.
What is a “Bubble Up” Casserole?
Bubble Bakes are recipes that start with a layer of biscuit dough (Pillsbury canned biscuits inspired the original name.) The raw biscuits are usually quartered and spread out as the foundation. When the casserole cooks, the dough “bubbles up” into the other layers, making a soft, chewy dish that’s irresistibly good!
What’s the Best Way to Freeze a Casserole?
Freezing casseroles is a fantastic way to save time, and since this Supreme Pizza Bubble Up is so easy to make, consider making multiples and freezing one. (FYI, the biscuit dough freezes great!) My favorite trick for freezing casseroles is to first line the dish with foil, leaving extra on all sides. Layer in all the ingredients, then fold the extra foil over the top, sealing the casserole. Pop it into the freezer as is, just long enough to fully freeze.
Remove it from the freezer, lift the frozen, foil-wrapped casserole out of the pan, and pop it back into the freezer! It takes up less space and doesn’t tie up your casserole dish. When you’re ready to use it, lay the frozen casserole back in the pan to thaw completely and then bake according to the instructions.

- ½ pound Italian sausage casing removed (sweet or spicy)
- 32.6 ounces refrigerated biscuits (see note)
- 14 ounces pizza sauce
- 8 ounces mozzarella cheese shredded
- 3 ounces pepperoni slices
- ½ cup green bell pepper cored and chopped
- ½ cup white onion peeled and chopped
- ½ cup button mushrooms cleaned and chopped
- 2.25 ounces canned black olives drained
Instructions
- Preheat the oven to 350 degrees F. Spray a 9-inch x 13-inch baking dish with non-stick cooking spray and set aside.
- Place a large skillet over medium heat. Add the Italian sausage and cook for 8-10 minutes until it's no longer pink and is nicely browned. Transfer to a paper towel-lined bowl to drain. (This can be done ahead of time, and the cooked sausage can be kept in the fridge until you're ready to use it later.)
- While the sausage cooks, take the biscuits out of the can and separate them into individual biscuits. Then cut each biscuit into quarters. Place the biscuit pieces in an even layer in the prepared baking dish.
- Spread the pizza sauce over the biscuits and then sprinkle with 1 1/2 cups of mozzarella. Place the pepperoni slices, cooked Italian sausage, bell pepper, onions, mushrooms, and black olives over the cheese. Then sprinkle the remaining 1/2 cup cheese over the top.
- Bake for 25-30 minutes or until the biscuits are cooked through and the cheese is melted.
- Remove from the oven and let stand for 5 minutes before cutting into portions. Serve warm.

Sounds good! Do you think this would work with bread dough instead of biscuits? Would it have to rise before I add the toppings? Could it be made in advance and refrigerated until we need it? Could I ask any more questions?

Hi Melissa! I would use pizza crust dough over bread dough, but bread dough would work. You’d want the bread ready to bake (risen) before adding toppings. You could pop it in the fridge that morning or overnight, but it’s really going to depend on the life of the dough. Be sure to cover it or put a lid on your baking dish while it’s in the fridge.
