Ingredients
- 2 large mangoes peeled, cored & chopped
- 1 cup canned black beans rinsed and drained
- 2 Roma tomatoes chopped
- 1 ear sweet corn raw, kernels cut from the cob
- ½ large red bell pepper cored and chopped
- ¼ red onion peeled and chopped
- 1-2 jalapenos seeded, deveined & minced
- 1 clove garlic finely minced
- 2 tablespoons lime juice (about 1 lime)
- ¼ cup cilantro finely chopped
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Add the mangoes, black beans, tomatoes, corn, bell pepper, onion, 1 jalapeno, garlic, lime juice, cilantro, chili powder, and ground cumin to a medium mixing bowl. Stir gently until evenly combined.
- Taste and add additional jalapeno, lime juice, salt, and pepper to taste, as desired. Stir again.
- Cover the bowl with plastic wrap and chill the salsa in the fridge for at least 1 hour before serving. (You can serve it immediately, but the flavors get better if you can wait.)
