An ARIZONA MULE COCKTAIL is an easy cocktail that will impress your friends. It’s got a bright color from the prickly pear and a kick at the end from the jalapeno infused vodka. It will be a hit every time you make it!
I developed a love of jalapenos while I lived in Arizona. I couldn’t handle the heat while I was growing up. It wasn’t until after I had kids that I found I liked the heat. Maybe the lack of sleep for several years did something to me, or maybe it was the extended time in the crazy desert heat that changed my tolerance levels! If you’ve been following Real Housemoms you know we like our jalapeno dishes. We’ve got Bacon Wrapped Jalapeno Poppers, Bacon Jalapeno Popper Dip, and even a Bacon Wrapped Jalapeno Popper Bloody Mary, to name just a few.
Hot peppers weren’t the only thing I developed a taste for in Arizona, I also LOVED prickly pear anything. You can get a lot of drinks made with prickly pear syrup, or even find prickly pear jam too! It has such a beautiful color and a nice sweet taste. Once my brother tried to bring one into the house and eat it but that turned into a very prickly disaster!!! I learned that you can’t see most of the prickles and if you don’t see them they will hurt you the most! Buying this stuff already bottled or in a jar is the way to go for me. If you’re not sure what it is, you can look at it here. You can find it in most grocery stores in the southwest or you could look online or in the liquor store. I loved the idea of using it to create another ginger beer cocktail. It tastes so great having the bit of spice from the peppers against the spice of the ginger in the ginger beer. Then it was all toned down with the sweetness of the prickly pear syrup. This drink is so beautiful that I love it for entertaining or just relaxing on the weekend watching the game.
Ingredients
- 2 oz. Jalapeno Infused Vodka
- ½ oz. prickly pear syrup
- 4 to 6 oz. ginger beer
- lime wedges
Instructions
- in an ice filled shaker combine jalapeno infused vodka and prickly pear syrup
- pour into an ice filled glass and squeeze a lime wedge into glass
- top off with ginger beer
- garnish with a lime wedge

I just love pickly pear cocktails! Can’t wait to try this, but I’m gonna be a wuss and go regular vodka. 🙂
