INGREDIENTS
Cookies: Because these Keto Cake Mix Cookies are made with packaged Swerve Sweets vanilla cake mix all you need to do is add eggs, vegetable oil, and vanilla extract.
Buttercream Frosting: For this simple buttercream, just combine softened butter, your favorite sugar substitute, heavy whipping cream, and vanilla extract.
HOW TO MAKE CAKE MIX KETO COOKIES
STEP ONE: First, start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. In a large mixing bowl, add the keto vanilla cake mix package, eggs, oil, and vanilla extract and gently mix the ingredients into a batter.
STEP TWO: On the baking sheet, use a cookie scoop to drop tablespoon-sized balls of dough about 2 inches apart from each other. Bake these Keto Cake Mix Cookies for 8-10 minutes or just until they are golden brown on the bottom.
STEP THREE: While the cookies are baking, you can prepare the keto buttercream frosting. In a medium-sized mixing bowl, add the softened butter, erythritol (or preferred sugar substitute), heavy whipping cream, and teaspoon of vanilla extract. Mix the frosting with a handheld mixer for 1-2 minutes or until it is creamy.
STEP FOUR: When the cookies are golden brown, remove them from the oven and transfer them to a wire rack for 5-8 minutes. Once the cookies have cooled, add the prepared keto frosting to a piping bag and pipe the frosting onto the keto cake mix cookies.
TIPS FOR SUCCESS
- You can slightly press down on the unbaked cookie dough balls with the bottom of a clean drinking glass to flatten the dough and give it more of a traditional rounded cookie shape.
- Keep a close eye on these cookies in the oven. You don’t want to over-bake them! They should just be turning a golden color along the edges.
HOW TO MAKE KETO BUTTERCREAM FROSTING
This keto friendly buttercream frosting recipe is so easy to make! All you have to do is mix together 1 3/4 cup of softened butter, 1 cup of erythritol (or any preferred sugar substitute), a tablespoon of heavy whipping cream, and a teaspoon of vanilla extract. Use a hand mixer to mix the buttercream for 1-2 minutes until it is creamy. I always use this recipe during the holidays when I make keto Christmas cookies.

Ingredients
Cookies
- 1 box Swerve Sweets vanilla cake mix
- 2 eggs
- ⅓ cup vegetable oil
- 2 teaspoons vanilla extract
Buttercream Frosting
- 1 ¾ cup butter softened
- 1 cup powdered erythritol (or your favorite sugar substitute)
- 1 tablespoon heavy whipping cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat, set aside.
- Pour the cake batter, eggs, oil, and 2 teaspoons vanilla extract into a mixing bowl and mix until a batter forms. Drop the dough in tablespoon-sized balls about 2-inches apart onto the prepared baking sheet.
- Bake cookies for 8-10 minutes or until golden brown around the bottom edge.
- Once cookies are done, remove the baking sheet from the oven and transfer the cookies to a wire rack to cool to room temperature.
- For the frosting, add the butter, erythritol, heavy whipping cream, and 1 teaspoon vanilla extract into a mixing bowl. Mix together with a hand mixer for 1-2 minutes or until smooth and creamy.
- Add prepared frosting into a piping bag (see note) and pipe frosting onto cooled cookies.
Notes
- You can slightly press down on the unbaked cookie dough balls with the bottom of a clean drinking glass to flatten the dough balls and give them more of a cookie shape.
- If you don’t have a piping bag with a tip, you can use a food storage bag with one corner cut off or just spread the frosting on with a spoon or offset spatula.
