I love wedge salads and enjoy trying various toppings and dressings on them. Homemade chipotle tomato dressing gives this salad a great spicy flavor that compliments the lettuce, bacon, and almonds so well!
What is a Wedge Salad?
A Wedge Salad is a popular menu item at steakhouses. It starts with a fresh head of Iceberg lettuce cut into wedges. Then it’s topped with bacon, diced tomatoes, and bleu cheese dressing.
Just because there’s a standard recipe, don’t be afraid to get creative and top it however you like.
This chipotle wedge isn’t only for the first course. Add a few hearty toppings, like some chicken or steak, and transform these fresh ingredients into an entree!
Ingredients Needed for Chipotle Tomato Wedge Salad
- Iceberg lettuce
- Canned chipotle peppers in adobo sauce
- Roma tomatoes
- Low-fat mayonnaise
- Cooked bacon
- Sliced almonds
- Sea salt & freshly ground black pepper
You can find canned chipotle peppers in adobo in your local grocery store’s Hispanic foods aisle. If you’re anything like me, you almost always end up with too many leftover chipotle peppers. Try using the extras to make Chipotle Chicken Tostadas or Creamy Chipotle Chicken.
How to Make Chipotle Tomato Wedge Salad
- The first thing you’ll want to do is wash your Iceberg lettuce and remove the outer layer. Next, using a sharp knife, cut the Iceberg into quarters and arrange the wedges on a serving platter.
- To make the Chipotle Tomato dressing, puree Chipotle peppers and tomatoes in a food processor. Then stir in the mayo, salt, and pepper.
- Spoon dressing over each wedge of iceberg lettuce. I usually use 1 to 2 tablespoons of dressing. After that sprinkle the crumbled bacon and almonds on top.
- Add salt & pepper to taste, then serve your iceberg wedge salads!

Ingredients
Wedge Salad
- 1 head iceberg lettuce
- 6 slices bacon cooked and crumbled
- ¼ cup almonds sliced
- Salt & pepper to taste
Chipotle Tomato Dressing
- 2 chipotle peppers canned in adobo
- 3 Roma tomatoes ends removed and cut in half
- ¼ cup low-fat mayonnaise
- ⅛ teaspoon salt
Instructions
Wedge Salad
- Wash and dry lettuce. Remove outer layer of leaves.
- Remove the core from lettuce head and cut into quarters. Arrange on plates or a serving platter.
- Top lettuce wedges with 1-2 tablespoons of dressing and then sprinkle with almonds, bacon, salt, and pepper.
Chipotle Tomato Dressing
- Puree chipotle peppers and tomatoes in a food processor.
- Whisk together chipotle puree with mayo and salt. Adjust seasoning to taste.
- Double recipe for leftovers, and store covered in an airtight container in the fridge.
