When I got the check out counter, I had a fleeting moment when I wondered if there was a buy limit. Thankfully not! While some people may have been embarrassed turning up at the check out laden with sun dried tomatoes, all I was worried about was whether some would be swiped from me.
Having “too much” sun dried tomato in the pantry is a pretty great problem to have. Sun dried tomato is one of those things that adds a fabulous “pop” to anything you add it to. Salads, pastas, sauces. But hands down, the best way to really experience true sun dried tomato flavor is when it is pureed. Like in this dip. Stirring through chopped up sun dried tomato simply does not compare. When you whizz it up in a food processor, the flavor really opens up and you can truly taste it.
This is one of those great back pocket recipes for when you have unexpected guests turn up – such was the day when I created this recipe. When my friend rang and said she was down the road with her entire brood and would I by chance be free for tea, the first thought that popped into my mind was – what can I whip up to nibble on??
I flung the pantry door open and was greeted with the mountain of sun dried tomatoes. And instantly, the answer came to me.
Pulverize them in the food processor with cream cheese that I threw in the microwave for 30 seconds to soften. Nibbles. Done. In less than 5 minutes. And it was an outright winner! 🙂

Food Processor: Slice, chop, and grate anything you need with this food processor. I’ve had this model for years and use it all the time. It’s a great workhorse in my kitchen and I’d recommend it to anyone!
Ingredients
- 8 oz cream cheese softened
- ⅓ cup sun dried tomatoes in oil plus more for garnish
- ½ cup sour cream or Greek yogurt
- ¼ cup mayonnaise
- 2 green onions thinly sliced, plus more for garnish
- 5 dashes Tabasco sauce or other hot sauce, adjust to taste
- ¾ tsp salt
- ½ tsp black pepper
- Crackers or vegetable sticks for dipping
Instructions
- Place dip ingredients in a food processor. Whizz for about 20 seconds until the sun dried tomatoes are blended.
- Transfer into a serving dish. Serve with crackers, chips, or veggie sticks!
